What are some good unique food recipes?

I like cooking, but I am not very original when it comes to food, so what are some unique food recipes that you know?

Chicken Stir Fry





INGREDIENTS


2 tablespoons peanut oil


7 cloves garlic, minced


1 teaspoon grated fresh ginger


1 bunch green onions, chopped


1 teaspoon salt


1 pound boneless skinless chicken breasts, cut into strips


2 onions, thinly sliced


1 cup sliced cabbage


1 red bell pepper, thinly sliced


2 cups sugar snap peas


1 cup chicken broth


2 tablespoons soy sauce


2 tablespoons white sugar


2 tablespoons cornstarch








DIRECTIONS


Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.


In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.

















Broccoli Pork Stir-Fry





INGREDIENTS


1 (3 ounce) package pork ramen noodles


1 cup warm water


2 teaspoons cornstarch


1/2 teaspoon garlic powder


1/4 teaspoon crushed red pepper flakes


2/3 cup cold water


1 1/2 teaspoons reduced-sodium soy sauce


1 teaspoon white vinegar


4 teaspoons canola oil


1/2 pound pork tenderloin, thinly sliced


6 large fresh mushrooms, sliced


1 cup fresh broccoli florets


1/2 cup julienned sweet red pepper


3 green onions, sliced (white parts only)





DIRECTIONS


Set aside 1 teaspoon of seasoning from seasoning packet (discard remaining seasoning or save for another use). Break noodles into small pieces and place in a microwave-safe dish; add warm water. Microwave, uncovered, on high for 2 minutes. Drain and set aside.


In a small bowl, combine the cornstarch, garlic powder, pepper flakes and reserved seasoning. Stir in the cold water, soy sauce and vinegar until smooth; set aside.


In a large skillet or wok, heat oil; stir-fry pork and mushrooms for 5 minutes. Add broccoli and red pepper. Stir-fry for 4-5 minutes or until vegetables are crisp-tender and pork is no longer pink. Stir cornstarch mixture and stir into skillet. Add noodles and onions. Bring to a boil; cook and stir for 2 minutes or until thickened.




















Chicken Enchiladas with Creamy Green Chile Sauce





INGREDIENTS


12 corn tortillas


vegetable oil for pan-frying


3 cooked boneless skinless chicken breast halves, shredded


10 ounces shredded Monterey Jack cheese


3/4 cup minced onion


1/4 cup butter


1/4 cup all-purpose flour


2 cups chicken broth


1 cup sour cream


1 (4 ounce) can chopped green chiles, drained


2 ounces shredded Monterey Jack cheese


1/2 cup chopped green onions


1/2 cup chopped fresh cilantro








DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C).


Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (one at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.


Divide chicken, 10 ounces of Monterey Jack cheese, and onion among the 12 tortillas. Roll up each tortilla and place seam side down in a greased baking pan.


Melt the butter in a saucepan over medium heat. Add the flour and whisk until mixture begins to boil. Slowly add the broth, stirring with a whisk until thickened. Mix in the sour cream and chiles, heat thoroughly but do not boil, stirring occasionally. Pour mixture over the enchiladas.


Bake in pre-heated oven for 20 minutes or until heated through. Top with remaining Monterey Jack cheese and bake for 5 more minutes. Garnish with chopped green onions and cilantro.














Chipotle Shrimp Tacos





INGREDIENTS


1 (12 ounce) package bacon, cut into small pieces


1/2 onion, diced


2 pounds large cooked shrimp - peeled, deveined, and cut in half


3 chipotle peppers in adobo sauce, minced


12 corn tortillas


1 cup chopped fresh cilantro


1 lime, juiced


salt to taste








DIRECTIONS


In a large, deep skillet fry the bacon over medium-high heat until evenly brown. Drain the bacon fat. Add the onions to the pan with the bacon and cook 5 minutes or until the onions are translucent. Stir in the shrimp and chipotle chiles; cook 4 minutes or until heated through.


Heat tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Turn and heat for another 5 to 10 seconds. Fill the heated tortillas with shrimp mixture. Sprinkle with cilantro, lime juice, and salt.




















Grilled Pork Chops with Fresh Nectarine Salsa





INGREDIENTS


2 nectarines, pitted and diced


1 ripe tomato, seeded and diced


1/4 cup diced onion


2 tablespoons chopped fresh cilantro


2 tablespoons fresh lime juice


1/4 teaspoon crushed red pepper flakes, or to taste

Chocolate stuffed french toast


Ingredients:


French bread


chocolate chips or chunks/morsels/etc


5 eggs


1 C milk


1 ts each cinnamon %26amp; vanilla





The night before you want to serve this:








Cut a loaf of French Bread into very thick slices. In each slice make a 3/4'; cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.


Place into greased 9x13'; baking dish. Mix up the eggs, milk %26amp; cinnamon/vanilla. Cover %26amp; refrigerate overnight.





Preheat oven to 400F. Bake 20-25 minutes uncovered.

Pancake S'mores


1/3 cup graham cracker crumbs


7 tablespoons marshmallow creme


7 tablespoons milk chocolate chips





Following your favorite pancake recipe::::


Cook until bubbles break on surface. Sprinkle about 1 teaspoon graham cracker crumbs over each pancake. Turn; cook until golden. Remove from griddle.





Spread about 1 tablespoon marshmallow creme over the crumbs side of each of 7 pancakes; sprinkle about 1 tablespoon chocolate chips over marshmallow creme on each. Top with another pancake, crumbs side down.

Candy Bar French Toast


12 slices day old bread


3 Hersheys milk chocolate candy bars - no nuts


3 eggs


1 cup milk


2 Tablespoons butter


1 teaspoon sugar


1 teaspoon vanilla extract


1/4 teaspoon salt


confectioner's sugar (for dusting at the end)


Break each candy bar in half - the short way. Grate just a little chocolate (no more than a half teaspoon off of each piece and save in a small bowl for later.





In a medium bowl, beat the eggs with the milk, sugar, vanilla, and salt. Pour half of this mixture into an large(13x9) ungreased baking dish.





Layer six slices of bread horizontally over the egg mixture. Place one piece of candy bar in the center of each piece of bread. Top each slice with remaining pieces of bread like sandwiches. Pour the remaining egg mixture over the sandwiches. Let this stand for at least 5 minutes so the bread can absorb the egg mixture.





On a griddle or in a large skillet, melt the butter over medium heat. Fry sandwiches until golden brown on both sides. Add an addition 2 teaspoons of butter mid-way, if cooking in batches.





To serve, cut each sandwich diagonally. Dust with confectioner's sugar and sprinkle with chocolate shavings.

Decadent Chocolate Waffles


1 Chocolate Cake Mix


Chocolate Syrup


Strawberries (sliced)


Whip Cream (Chocolate or regular)


1 lg Chocolate Bar








Mix cake mix according to directions. Using a Belgium Waffle maker, use one ladle of cake mix per waffle. After waffle is cooked, place on a plate, put


strawberries, %26amp; chocolate syrup. Top with whipped cream %26amp; grated chocolate.





Makes approximately 1/2 dozen waffles.

Brownie Dessert Waffles


Good served with a fruit cup.





1/2 cup butter


1/4 cup unsweetened cocoa powder


3/4 cup white sugar


2 eggs


1 tablespoon water


1 1/4 cups all-purpose flour


1/4 teaspoon salt


2/3 cup chopped pecans


1/3 cup confectioners' sugar for decoration





Preheat waffle iron.





Melt butter in a sauce pan. Remove from heat and stir in cocoa. Mix in the sugar, eggs and water. Add the flour and salt, beating well. Stir in the nuts.


In each well of the waffle iron, add 1 well rounded spoonful. Cook brownie in waffle iron as you would co



collard greens and fish


10 large collard green leaves


1 cup water


1/4 cup butter or margarine


2 medium onions, sliced


1 medium green bell pepper, sliced


2 tablespoons water


1 teaspoon salt


1 pound fish fillets (catfish, tilapia, red snapper)


1/2 teaspoon salt


1/2 teaspoon paprika


1/4 teaspoon pepper








1. Wash collard green leaves. Cut off long stem at the base of each leaf; carefully shave the remaining thick stem. Chop leaves. In 2-quart saucepan, heat 1 cup water to boiling. Add chopped collard greens. Boil 15 to 18 minutes or until softened; drain. Pat dry with paper towels.


2. In 4-quart Dutch oven, melt butter over medium-high heat. Cook collard greens, onions, bell pepper, 2 tablespoons water and 1 teaspoon salt in butter 4 to 6 minutes, stirring occasionally, until onion is crisp-tender.


3. Cut fish into 3x3/4-inch strips; add to vegetables. Sprinkle with 1/2 teaspoon salt, the paprika and pepper. Cover and simmer 6 to 8 minutes or until fish flakes easily with fork. Serve in large pasta bowls.


High Altitude (3500-6500 ft): No changes.









Pre heat oven to 450 degrees





6 tilapia, cod, or cat fish fillets


1 1/4 cup Alfredo sauce


3/4 cup Parmesan cheese


3/4 cup Italian bread crumbs


3 Tbsp vegetable oil





Combine Parmesan cheese, bread crumbs, and oil.


Place fish fillets in a shallow non-stick baking pan


Spread 3 Tbsp of the Alfredo sauce on each fillet


Sprinkle 1/3 cup of the cheese mixture on each fillet and firmly pat over the Alfredo sauce





Place in oven and bake for 10 minutes or until fish read 150 degrees





My wife makes this with roasted vegetables. She cuts up zucchini, squash, and peppers, sprinkles Italian seasonings, salt garlic and bakes it at the same time with the fish. Sometimes she uses rice, other times angel hair pasta.
