Do you know any websites that have healthy food recipes to help you get results faster?

My husband and I hit the gym alot but I was REALLY paying attention to the food I make and Im beginning to realize that its not that healthy and I think It might have to do with the fact that its our first year married and I cook good foods but alot of them are ';instants'; and practically made for you. Here's what I feed my dogs...


Breakfast: Chicken neck.


Lunch: Diced chicken and diced liver (just weaning of some ground meat and bone to help them gain some weight)


Dinner: Chicken wing.





There is also BARF (Bones And Raw Food).


Ground meat, ground bones, ground vegetables, ground fruit, kefir and dog multivitamin supplement.





Those are the two methods of home made feeding I know and have used, Prey Model works best for us.





Just to clarify ALL meat is raw especially RMB (raw meaty bones) since any bone will splinter if it's cooked.
Research this properly before you decide.





I feed BARF and I feed from when they are puppies, however I do know where ALL my food comes from, its not full of growth hormones or pestisides and if you don't know the source of the food you are feeding, ie you buy at the supermarket or butchers then you will need to cook it to give a small pup as their immune systems are not yet developed enough to deal with some of these things.





You are aiming for strong bones and teeth and a balanced diet, so it depends on what it is you feed if you need to add vits and suppliments

    I'm currently trying to eat more healthy so I need some good ideas for healthy food. I'm not very creative when it comes to cooking so all I can basically think of is salad, but I'm really bored with it. I'm a vegetarian also. Any recipes involving brown rice as well.Healthy Food recipes and ideas?
    You can cook brown rice ahead of time and use it for so many things. My favorite is to take the cold brown rice and make a ';fried'; rice. If you have sesame oil I would suggest using it, but I will assume you dont have it.





    Take your favorite veggies for ';fried rice'; and cut and dice them into a size you like and start with the thickest/densest one first in the hot pan and add the rice last.





    For example this is my version:





    The day ahead I cook my brown rice and refrigerate it.





    1 Green Onion chopped into 1/4 inch pieces


    Frozen peas


    Frozen edamame


    Diced carrots


    2 eggs, scrambled





    Heat a saute pan with the sesame oil. Once it is hot add the carrots and saute for approximately four minutes. Then add edamame and peas. Next add the brown rice. Saute for about 2 minutes. Then make a spot in the middle of the pan and pour the eggs into the middle and scramble them completely before mixing with the rice. Dont worry if the eggs run into the rice. Add green onions. Saute for another 2-3 minutes.

    Mexican Lentil Casserole





    6 servings





    1/2 cup onion, chopped


    1/2 cup green bell pepper, chopped


    1/2 cup celery, chopped


    4 cups water


    1 cup lentils, uncooked


    1 1/2 cups brown rice, cooked


    6 ounces tomato paste


    1 1/4 ounces taco seasoning mix


    1/2 teaspoon chili powder





    In a medium saucepan, combine onions, green pepper, celery and water. Bring to a boil over medium heat. Stir in lentils, cover pot, reduce heat to low, and simmer 40 minutes.





    Heat oven to 375 degrees F. Lightly oil a 1 3/4-quart casserole or spray with a nonstick cooking spray.





    Remove saucepan from heat and stir in remaining ingredients, mixing well. Spoon into prepared casserole. Bake, uncovered, 25 minutes. Let stand 5 minutes before serving.





    Per serving: 228 cal; 14 g prot; 1 g fat; 43 g carb; 605 mg sod; 0 mg chol.
    The Moosewood Cookbook and The Enchanted Brocolli cookbook are amazing and a lot of the recipes are simple. I make Tabouli a lot. I chop a bunch of curley parsley, fresh mint, scallions, thawed (not cooked) baby peas, a couple tomatoes and about 1/2 cup (soaked) bulgar...olive oil and lemon juice dressing ---YUM! Also, lentils are easy. Saute an onion in a frying pan and in another pan bring a bag of washed lentils and 6-8 cups of water to a boil and simmer until soft. Add brown rice to bulk it up. Add 2 parts water to every 1 part rice you add. Add the onion and a dash of cumin and eat with Franks Red Hot sauce.
    well wut u need to know is that because it is healthy doesnt mean that it is going to taste bland and bad. okay get a pan that has a tight fitting lid and is wider than it is tall. Now add about a tablespoon or two of olive oil extra virgin and put heat it up on medium heat. then add julienned onion, celery, carrot, and leek, add a heavy pinch of kosher salt and cook until the vegetables are soft and the onions are transparent. Now add minced ginger and garlic, and then add a bay leaf, dill, chicken broth, soy sauce, sesame oil, and some dry white wine. Now add some fish fillets, a non-oily fish, and make sure that they are pretty submerged if not turn them half way through cooking. then cook them for 5-10 minutes or until the fish is opaque and flakes easily. Then strain sauce in a sauce pan and reduce it to make a thick sauce and serve on top of the vegetables and fish.

    This website is really helpful. It has a lot of recipes that cover all courses and everything is vegetarian. Some of the recipes seem difficult, but there are a lot of easy ones too. I am not very good with cooking, but I found this website simple enough to follow. Good luck!
    How about quiche, pizza made with pita bread bases, baked beans with chopped sauteed apple and cheese mixed through it, roast vegetable soup - puree the roast veges and add a little water and curry powder, then reheat, brown rice salad with veges mixed through.

    INGREDIENTS


    4 sweet potatoes


    1/2 cup orange juice


    2/3 cup light brown sugar


    1/4 cup margarine, softened


    1/2 teaspoon freshly grated orange peel


    1/4 teaspoon ground cinnamon











    DIRECTIONS


    Preheat an oven to 425 degrees F (220 degrees C). Cover a cookie sheet with aluminum foil.


    Scrub the sweet potatoes, prick them deeply in several places with a fork, and place them on the lined cookie sheet.


    Bake the potatoes in the preheated oven until tender, about 45 minutes. Allow them to cool until they can be handled, about 15 minutes. Scoop out the sweet potato flesh into a large bowl and mash well. Stir in orange juice, brown sugar, margarine, orange peel, and cinnamon. If you prefer the sweet potatoes to be very smooth, you can mix them with an electric mixer. Spread the potatoes in a microwave-safe dish.


    Microwave on HIGH until heated through, about 5 minutes.

    Potato Chips --











    INGREDIENTS


    1 tablespoon vegetable oil


    1 potato, sliced paper thin (peel optional)


    1/2 teaspoon salt, or to taste











    DIRECTIONS


    Pour the vegetable oil into a plastic bag (a produce bag works well). Add the potato slices, and shake to coat.


    Coat a large dinner plate lightly with oil or cooking spray. Arrange potato slices in a single layer on the dish.


    Cook in the microwave for 3 to 5 minutes, or until lightly browned (if not browned, they will not become crisp). Times will vary depending on the power of your microwave. Remove chips from plate, and toss with salt (or other seasonings). Let cool. Repeat process with the remaining potato slices. You will not need to keep oiling the plate.

    INGREDIENTS


    3 tablespoons butter


    1 clove garlic, minced


    1 onion, chopped


    1 1/2 cups vegetable broth


    1 cup uncooked Arborio rice


    3/4 cup white wine


    1/4 cup grated Parmesan cheese











    DIRECTIONS


    In a 3 quart, microwave safe casserole dish combine butter, garlic and onion. Place dish in microwave and cook on high for 3 minutes.


    Place vegetable broth in a microwave safe dish. Heat on microwave until the broth is hot but not boiling (approximately 2 minutes).


    Stir the rice and broth into the casserole dish with the onion, butter and garlic mixture. Cover the dish tightly and cook on high for 6 minutes.


    Stir wine into the rice. Cook on high for 10 minutes more. Most of the liquid should boil off. Stir the cheese into the rice and serve.

    Brown Rice, Broccoli, Cheese and Walnut Surprise --











    INGREDIENTS


    1/2 cup chopped walnuts


    1 tablespoon butter


    1 onion, chopped


    1/2 teaspoon minced garlic


    1 cup uncooked instant brown rice


    1 cup vegetable broth


    1 pound fresh broccoli florets


    1/2 teaspoon salt


    1/8 teaspoon ground black pepper


    1 cup shredded Cheddar cheese











    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Place walnuts on small baking sheet, and bake for 6 to 8 minutes or until toasted.


    Melt butter in a medium saucepan over medium heat. Cook onion and garlic in melted butter for 3 minutes, stirring frequently. Stir in the rice, add the broth, and bring to a boil. Reduce heat to medium-low. Cover, and simmer until liquid is absorbed, about 7 to 8 minutes.


    Place broccoli in a microwave-safe casserole dish, and sprinkle with salt and pepper. Cover, and microwave until tender.


    Spoon rice onto a serving platter, and top with broccoli. Sprinkle walnuts and cheese on top.

    Quick and Easy Stuffed Peppers --











    INGREDIENTS


    2 large red bell peppers, halved and seeded


    1 (8 ounce) can stewed tomatoes, with liquid


    1/3 cup quick-cooking brown rice


    2 tablespoons hot water


    2 green onions, thinly sliced


    1/2 cup frozen corn kernels, thawed and drained


    1/2 (15 ounce) can kidney beans, drained and rinsed


    1/4 teaspoon crushed red pepper flakes


    1/2 cup shredded mozzarella cheese


    1 tablespoon grated Parmesan cheese











    DIRECTIONS


    Arrange pepper halves in a 9 inch square glass baking dish. Cover dish with plastic wrap. Poke a few holes in the plastic wrap for vents, and heat 4 minutes in the microwave, or until tender.


    In a medium bowl, mix tomatoes and their liquid, rice, and water. Cover with plastic, and cook in the microwave for 4 minutes, or until rice is cooked.


    Stir green onions, corn, kidney beans, and red pepper flakes into the tomato mixture. Heat in the microwave for 3 minutes, or until heated through.


    Spoon hot tomato mixture evenly into pepper halves, and cover with plastic wrap. Poke a few holes in the plastic to vent steam, and heat in the microwave 4 minutes. Remove plastic, sprinkle with mozzarella cheese and Parmesan cheese, and allow to stand 1 to 2 minutes before serving.

    try to use splenda if u need sugar

    I put whole apples in a microwave safe bowl with a little water in the bottom, and cover them with a lid, and microwave until they are completely soft. Then I take out the apples, put them in a sieve, and mush them through the sieve with a spoon (the skins come off when you do this, and the seeds don't come through). Then you can freeze the puree. You can do this with pears too.





    Also, you can mash potatoes without any butter or milk, freeze it, then thaw and thin with formula. I mush up fresh bananas with a fork and give them to my son, sometimes mixed into rice cereal.
    I wrap a sweet potatoe in tin foil and pop it in the oven at about 350 until its soft then you just mash it up, my daughter loves sweet potatoes and its so easy to just throw a few in the oven. Freezes great, I freeze it in a ice cube tray and then I take a few out an hour before I'm going to feed her.

    Well first when I bought my dog the food I saw peas,carrots,green peas (difrent from peas) and what I did was take some meat chop it up (use soft meat) into small peaces and grade the carrots so and put the shadings in the bowl then put the peas and the grean peas (difrent from peas) and put gravy that makes the food combine and gives ita extra taste and then mix it and its a dog stew. I do it all the time...... hope it works for you =]
    Not giving him too much i give my thirteen month old working cocker, a mix of raw carrots, peppers, cucumber, pasta, broccoli, peas as well as Bakers dry complete meals. He is fit, healthy and full of so much energy!!

    Here's a recipe I found when I was planning to travel there.





    LIBERIAN RICE CAKE





    * 1/2 pound butter


    * 1 cup sugar


    * 4 eggs, beaten


    * 2 cups rice flour (* see below for substitute)


    * 2 teaspoons cream of tartar


    * 1 teaspoon baking soda


    * 1 cup milk


    * 1/2 teaspoon nutmeg


    * 1 teaspoon vanilla extract





    Cream the butter and add the sugar gradually. Beat until light and fluffy. Add the eggs and beat well. Preheat oven to 325掳. Sift the rice flour, cream of tartar, and baking soda together. Add to the egg mixture alternately with the milk. Beat constantly. Add the nutmeg and vanilla. Beat well. Pour into a 12-inch buttered loaf pan. Bake in a 325掳 oven for 35 minutes, or until a cake tester comes out clean.





    (*In place of rice flour you can use baby rice-cereal which you can get in any supermarket so there are no hard-to-find ingredients.)Do any of you have some good Liberian or Soul Food recipes?
    Traditional Libyan Semolina and Date Cake W/Syrup





    1录 hours , 15 min prep , SERVES 8 -10 , 1 cake (Change Servings)


    Change to: cake US Metric








    Safra is a traditional cake from Libya. It is rich %26amp; aromatic with the flavours of cloves, cinnaomn %26amp; dates. To finish this delicious cake you drench it in syrup %26amp; leave it to soak for around 6 hours... then you can enjoy! Time to make doesn't include the syrup soaking time!





    Ingredients


    DATE FILLING


    3 tablespoons sunflower oil


    1 1/2 lbs pitted dates, chopped


    1 teaspoon ground cinnamon


    1/8 teaspoon ground cloves





    CAKE


    2 lbs semolina (fine or medium)


    1 lb granulated sugar


    2 teaspoons baking powder


    1 cup sunflower oil


    3/4 cup water


    blanched almond or whole cloves, for garnish


    SYRUP


    1 cup sugar


    1/2 cup water


    1 cup honey


    1 lemon, juice of, 2 to 3 tablespoon





    Directions


    Put the oil and dates in a heavy skillet and cook over low heat, stirring continuously, for about 20 minutes, or until a thick paste has formed.


    Remove skillet from the heat and stir in the cinnamon and cloves. Cool the paste. Mix cake ingredients except the almonds or cloves together into a thick batter.


    Put half of the batter into a cake tin 12 x 12 in., or 12 x 16 inches Put in the date filling, pressing it into the corners of the tin so that it covers the batter. Pour in the balance of the batter and smooth out the surface.


    Lightly score the top of the cake in 2- inches diamond shapes or square pieces. Put 1 blanched almond in the center of each diamond or press 1 whole clove into each piece, with the stem down. (clove is prettier but yor not going to eat it!).


    Put the cake tin into the center of the oven so that it bakes evenly, and bake in a 350 degree F. oven for 45 minutes.


    Put all syrup ingredients into a pan and simmer over low heat for 10 minutes, stirring frequently. When the cake is removed from the oven, pour the hot syrup over the top and allow it to be absorbed.


    Let the cake stand at room temperature for at least 6 hours before eating.

One of the best places in my area is Cha Cha Cha in Encino. I've enjoyed everything I've had there, but I especially like the shrimp and rice dish called camarones ******.';


    6 tablespoons (3/4 stick) butter


    6 large garlic cloves, chopped


    2 teaspoons finely ground black pepper


    2 teaspoons dried thyme


    1 1/2 teaspoons cayenne pepper


    30 uncooked large shrimp, peeled, deveined


    2 cups Jamaican lager or other lager beer


    6 cups low-salt chicken broth


    1/2 cup Worcestershire sauce


    1 tablespoon honey


    Freshly cooked white rice





    Melt 6 tablespoons butter in heavy large skillet over medium-high heat. Add chopped garlic, black pepper, dried thyme, and cayenne pepper and stir 1 minute. Add shrimp and saut茅 1 minute. Stir in beer. Using slotted spoon, transfer shrimp to large bowl. Add chicken broth, Worcestershire sauce, and honey to skillet and boil until sauce is reduced to 1 1/4 cups and coats spoon thinly, about 45 minutes. Return shrimp to sauce and simmer until shrimp are just cooked through, about 3 minutes. Season to taste with salt. Serve with rice.





    Makes 4 servings.

    3 cups flour


    1 tablespoon baking powder


    3 tablespoons sugar


    1 teaspoon salt


    1 bottle (12 ounces) beer, at room temperature


    1/4 cup unsalted butter, melted





    Preheat the oven to 375掳F. In a mixing bowl, combine all the dry ingredients. Add the beer all at once, mixing as little as possible; the batter should be lumpy.


    Pour the batter into a 9-x-5-x-3-inch loaf pan and brush with the melted butter. Bake in the oven for 35 to 40 minutes, or until an inserted skewer comes out clean. Turn out onto a rack to cool.

    ONION AND GARLIC BEER SOUP


    For a different take on onion soup, a traditional beef-broth base is here spiked with beer and fortified with garlic. Rye-bread croutons top this simple soup, which, with the addition of a salad, makes a fine fall supper.


    4 pounds onions (about 10), sliced thin


    4 large garlic cloves, minced


    2 tablespoons olive oil


    a 12-ounce bottle of beer (not dark)


    5 1/4 cups beef broth


    2 tablespoons sugar


    2 tablespoons unsalted butter


    4 slices of day-old rye bread, crusts discarded and the bread cut into 1/2 inch cubes


    freshly grated Parmesan as an accompaniment





    In a heavy kettle cook the onions and the garlic in the oil over moderate heat, stirring occasionally, until the mixture is browned. Stir in the beer and the broth, simmer the mixture, covered, for 45 minutes, and stir in the sugar and salt and pepper to taste. While the soup is simmering, in a heavy skillet melt the butter over moderate heat, add the bread cubes, and cook them, stirring, until they are golden. Divide the soup among 6 bowls and top it with the Parmesan and the croutons.





    Makes about 12 cups, serving 6.

    Directions:


    Rinse chicken and remove gizzard, neck, etc. Sprinkle the chicken, inside and out, heavily with seasonings. Spray beer can with non-stick cooking spray. Put chicken on top of beer and set on grill using indirect heat for 1 hour. Rub on some vegetable oil and finish cooking until browned all over (an additional 20 - 30 minutes), AND juices run clear. Total time on the grill is about 1 1/2 hours.

    Beer cheese soup and beer battered fried fish
    Beer bread, but its pretty nasty. Try Drunken Chicken. Stick an open can of beer in a whole chicken, stand it up on the grill and cook until all the pink is gone. Perfection.
    So many recipes call for the use of beer. The best web site to find them would be recipesource.com. I know there are bread recipes, not too sure about cakes and cookies though.

    For the tuna salad, drain 6ounce can of (water-packed solid white) tuna, add 1 tsp. lemon juice, 1/2 tsp. sugar, 1 Tbs. pickle relish, 1 stalk sliced celery, 1 cup frozen peas (no need to cook), small chopped (red) onion, chopped parsley and/or chives, and some mayo or Miracle Whip. Then carefully stir in a couple quartered sliced hard boiled eggs. Serve in lettuce cup with fresh tomatoes. Corn bread completes the meal!Looking for cold food recipes?
    Cold Cucumber Soup is very refreshing on a hot summer day.





    You can also make gazpacho -- a cold tomato soup. Check out recipes on line for this delicious soup.





    Ingredients:


    One large cucumber, peeled and finely chopped, with seeds and pulpy center removed. (if you use a seedless (very long) Cucumber, or other thin-skinned variety, you need not remove the skin or center – as there are few seeds).


    8 oz. cup of plain yogurt (do not use flavored – or any highly sweetened variety).


    ¼ cup of chopped fresh mint (to taste) – plus a bit more to garnish later (You can omit if you don't like mint)


    Ice cold water to thin the yogurt


    Method:


    Take the yogurt and thin with cold water to form a “soupy” consistency – not too thin or too thick.


    Add the finely chopped cucumber and the mint


    Mix together thoroughly, adding more water, if necessary to get the desired consistency.


    Cover bowl and chill thoroughly for at least 6 hours (overnight is preferable) to allow the flavors to really meld together.


    Pour into wide, shallow bowls, garnish with a bit more mint, and serve icy cold.


    All that is needed to round out the meal is some fruit, some bread and some cheese.
    This is a great recipe:





    4 ripe tomatoes - peeled and seeded


    3 cloves garlic, peeled


    1/3 cup chopped fresh basil


    1 teaspoon olive oil


    1/2 teaspoon white sugar


    1 (8 ounce) package uncooked spaghetti


    1/2 cup shredded Parmesan cheese





    In a blender or food processor, combine tomatoes, garlic, basil, oil and sugar and process until smooth. Cover and refrigerate sauce.


    Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.


    Remove sauce from refrigerator and pour over spaghetti. Toss to coat and serve topped with Parmesan cheese.
    Lettuce Salads - prepackaged blends are easy, some have dressing packets included. Add cheese and other veggies. Easy and perfect for hot days when you don't feel like cooking. If you like blue cheese, a wedge salad is also a great choice.
    Make pinwheel sandwiches... use either lavosh or tortilla or flatbread as the base and layer on it coldcuts and spread and such, roll it up and slice.





    Another is cold pasta salad. Cook whatever kind of pasta you like (fusili, penne, rotini, spaghetti, etc) and chill it, then add in your favorite italian dressing, whole kernel corn (canned, drained), cut up salami, cut up red peppers, cooked (and chilled) green peas, olives and mexican style cheese blend. Yum!

    I make a 3 bean salad using a can of wax beans-drainer- can of kidney beans-drained and can of green beans -drained. Strain and rinse in collander - put in storage bowl w/cover. Add onion rings- and any other bits of fresh veggies you might have on hand- thin green/red pepper slices. Make a vinigarette dressing - add to bean mix - refrigerate - this salad is good for several days
    I love to make cucumber salad this time of year....Take 4 or 5 medium size cucumbers %26amp; slice semi-thin %26amp; place in large bowl. Add 1 cup white vinegar %26amp; 1 cup sugar along with 1 or 2 tablespoons of mustard seed. Stir together well, then chill for at least 4 hours before serving ( best if made the day before).....Yummy!

    1 lb ground beef


    1 envelope taco seasoning


    1 10 oz. can refried beans


    1 c. grape tomatoes, halved


    lettuce, shredded


    1 12 oz pkg. shredded cheddar cheese


    1 12 oz bag nacho cheese flavored Doritos, crushed


    1 16 oz. bottle Italian salad dressing





    Brown ground beeef and add taco seasoning. Simmer according to directions. Place in large bowl and refrigerate until cool. Add beans, tomatoes, lettuce, cheese, and Doritos. Mix well.


    Cover with salad dressing. Mix again. Serve almost immediately

    4 ounces cream cheese -- softened


    1/4 cup minced fresh cilantro or parsley


    2 tablespoons minced banana peppers

    12 ounces cream cheese -- softened


    1/2 cup shredded carrot


    1/2 cup shredded zucchini

    Directions:





    In a bowl, combine cream cheese, cilantro, peppers, and garlic. Spread about 2 on each slice of beef. Roll up tightly; wrap in plastic wrap. In another bowl, combine cream cheese, carrot, zucchini, and dill. Spread about 2 tablespoons on each slice of ham and turkey. Roll up tightly; wrap in plastic wrap. Refrigerate overnight. Slice into 1 1/2-inch pieces

    * 1/4 teaspoon freshly ground black pepper

    * 1/2 teaspoon oregano


    * 2/3 cup French Bread/Pizza Mix


    * 8 ounces grated sharp cheddar cheese


    * 1/3 cup minced onion


    * 1 9-ounce package of frozen chopped spinach, defrosted, drained and squeezed very dry


    * 2 large eggs, separated, plus 2 egg whites


    * 1 cup milk


    * 4 tablespoons melted unsalted butter or vegetable oil


    - Preheat oven to 375 degrees. Lightly grease a 9-x-9-inch pan. In a large mixing bowl, combine spinach, onion, and cheese. In another bowl, mix together French Bread/Pizza Mix and spices.





    - Mix egg yolks with milk and butter and fold into cheese mixture. Add flour mixture and mix to combine. Beat egg whites until stiff and fold into mixture. Spread mixture in prepared pan and bake 30-35 minutes.





    - Cool and cut into squares. Serve at room temperature or wrap and freeze. Reheat frozen squares in a 350 degree oven for about 10 minutes.





    Variations: use Swiss cheese or a blend of Italian cheeses. Substitute chopped broccoli or shredded zucchini for the spinach. Add chopped pepperoni or cooked sausage or bacon pieces, chopped red pepper, or sliced mushrooms.





    Although cut into squares like brownies, these savory treats taste more like a quiche.

    How about some REAL Greek salad?





    In Greece a true Greek salad is served without lettuce. Here is one that will lend itself well to cooked chicken, shrimp or even turkey sprinkled on top, which of coarse will not make it a true Greek salad lol!. This is my own recipe, I hope you enjoy it as much as my family does. This salad must be chilled for a minumum of 2 hours before serving, don't even bother eating it before the 2 hours, this salad will take on a whole different flavor when chilled!


    The dressing ingredients may be doubled.





    1 lb tomatoes, seeded and chopped


    1 large cucumber, peeled, seeded and chopped


    1 large red bell pepper, sliced thinly


    1-2 cup kalamata olives


    1 small red onion, sliced thinly


    6 tablespoons olive oil


    3 tablespoons red wine vinegar


    1 teaspoon dried oregano (more if desired)


    1 tablespoon grated parmesan cheese (optional)


    1 teaspoon sugar


    salt and black pepper


    1 1/2 cups crumbled feta cheese (use more if desired)


    fresh lemon juice





    In a blender or using a whisk, mix together olive oil, red wine vinegar, oregano, Parmesan cheese (if using) salt and pepper, if needed add in 1 teaspoon sugar.


    In a medium bowl place cucumbers, red bell pepper, olives, sliced red onion and about half of the feta cheese.


    Pour the dressing over; toss well to combine, adding in more dried oregano if desired.


    Cover and chill for 2 hours.


    Top with remaining feta cheese then drizzle fresh lemon juice on top if desired before serving.

    4-5 medium apples, peeled and cored - use naturally sweet varieties, such as:


    Gala


    Golden or Red Delicious


    Fuji


    Pink Lady


    Red Rome


    pinch nutmeg or cinnamon


    water





    Chop the apples roughly and place in a saucepan.


    Pour in about one inch of water - (you could use apple juice instead, but this will contain sugar).


    Bring the apples to a boil, then reduce the heat.


    Cover and simmer slowly until the apple chunks are tender (about 10-15 mins).


    #TIP-DON'T cook the apples to the point where the mixture actually looks like applesauce! Cooking it this long will cause it to be watery and tasteless.Instead, remove the apple chunks from the pan and either puree them or mash them well. Thin with a little cooking water if necessary.Sprinkle with cinnamon and nutmeg and serve warm or - as a soothing treat for teething babies - nice and cold. If you are going to freeze your baby's applesauce, DON'T add the spices before you freeze it, because they will lose their flavour.And avoid applesauce altogether is your baby is constipated or prone to constipation, because it is very binding and will make the problem worse.





    *Delicious Baked Apples





    Choose a nice sweet apple (those listed in the applesauce recipe above are ideal).Preheat the oven to 350 degrees F, 180 deg C.Wash the apple and then remove the core (a melon baller is useful for this).Sprinkle a little nutmeg or cinnamon over the apple, then fill the apple with raisins. You may like to add a drop of maple syrup, as the raisins may be quite tart.Wrap the apple in aluminium foil and seal tightly.Bake the apple for around 45 mins, until it feels nice and tender.Remove from the oven and cool slightly, then remove the skin.Mash or puree thoroughly and serve!





    *Real Fruit Jelly





    110 ml water


    1 tbsp agar flakes* or gelatine


    220 ml fruit puree


    330 ml fruit juice


    (Agar is derived from seaweed and is used as a thickener. You can find it in most health food stores. It is expensive, but a little goes a long way.)





    In a saucepan, combine the agar and water and stir until the flakes are dissolved.Pour in the juice and heat for a couple of minutes, stirring continuously.Pour into a suitable bowl and place into the refrigerator.As the mixture starts to set, stir in the puree. You can use any fruit - I prefer to mix several fruits together. Avoid pineapple though - it doesn't set well.Return to the refrigerator until ready to serve.





    *Tropical Fruit Salad With Avocado





    1/2 ripe avocado, cubed


    1/2 small ripe banana, sliced


    1/2 kiwi fruit, peeled and sliced


    1/4 papaya, peeled and sliced


    2oz natural, plain yogurt


    drop of pure maple syrup (optional)





    For older babies, already enjoying finger foods, simply place all the prepared fruits into a bowl. For younger babies, puree the fruits together.Stir the maple syrup into the yogurt (if you're using it), then swirl the yogurt on top of the fruit.For a little nutritional boost, top with a sprinkle of wheat germ.





    *Creamy Kiwi Pudding





    1 ripe kiwi fruit


    2oz prepared baby cereal or oatmeal


    2oz cottage cheese





    Peel the kiwi fruit, then puree or mash well with a fork.


    Combine with the cereal and cottage cheese for a creamy treat.





    *Frozen Banana Pops





    1/2 ripe banana


    1/2 ripe peach, peeled and with stone removed


    4oz plain, natural yogurt/Soya Yogurt


    a little pure maple syrup (optional)





    Puree all the ingredients together in a food processor.


    Pour the mixture into popsicle (lolly) moulds. If you don't have these, an alternative is to freeze the mixture in a large ice cube tray, or in small disposable cups. All you need to do is push in the popsicle/lolly sticks as the mixture begins to freeze.Serve when frozen. Older babies will be happy to hold the stick - for younger babies, simply squash the banana pops up in a bowl and feed them to baby from the spoon.


    #TIP: These banana pops make an ideal, soothing treat if your baby is teething.





    *Carrot And Lentil Soup





    1/2 lb dry, rinsed lentils


    1/2 lb carrots, peeled and diced


    1 small onion, finely chopped


    34 fl oz (1 litre) of water


    1 tbsp olive oil





    In a large saucepan, gently saute the onion in the oil, until soft.


    Add the lentils, carrots and water.


    Bring to the boil.Reduce the heat, cover and simmer for 1-1 1/2 hours, until the lentils are soft.If necessary, you can puree the soup once it's cool, adding a little water to thin the mixture.





    *Pureed Pumpkin and Parsnip





    8oz fresh pumpkin


    1 medium parsnip


    little pinch nutmeg


    1 tsp fresh chives, chopped





    Peel the pumpkin and the parsnip and cut into small cubes.


    Place in a steamer, or simmer in a little water, until the vegetable dice are tender.Drain, then mash with a fork (or puree in a blender if you want the meal to be completely smooth).Add the nutmeg and chives, stir well and serve!





    *Warming Chicken Stew





    8oz boneless, cooked chicken, chopped


    2oz cooked vegetables (choose the vegetables your baby prefers)


    2oz cooked rice (white or brown)


    2fl oz homemade chicken stock


    2fl oz breastmilk/formula


    pinch of thyme





    Simply blend all ingredients together, pureeing if necessary, for a wholesome, tasty stew.





    *Chicken Dinner With Grapes





    1 chicken breast, skinless and boneless


    6 fl oz homemade chicken stock


    around 10-15 white grapes, seedless and peeled


    1 courgette (zucchini), sliced


    1 small white potato, peeled and cut into slices





    Chop the chicken breast, combine with the other ingredients and place in a small saucepan over a high heat.


    Bring to the boil, then lower the heat. Cook for around 30 mins until the potato is tender and the chicken is cooked through.Puree in a blender, adding a little stock if necessary.





    *One Pot Chicken Dinner





    1 chopped boneless, skinless chicken breast


    1 apple


    1 medium sweet potato


    16 fl oz homemade chicken stock


    tiny pinch of cinnamon





    Peel, core and dice the apple. Peel and dice the sweet potato.Pour the stock into a saucepan and bring to a simmer. Add the chopped chicken and allow to simmer for 10 mins.Add the sweet potato and apple cubes and simmer for another 15 mins, until the sweet potato is fork tender.Puree or chop, then sprinkle with cinnamon and serve.

    Basic Baby Dinner





    1/2 cup cubed and cooked meat (lean beef, chicken, turkey, or egg yolks)


    1/2 cup thoroughly cooked and cubed vegetables (carrots, peas, beans, sweet potatoes, butternut squash, acorn squash)


    1/4 cup liquid





    Put all the ingredients together in your blender or food processor and process until smooth. As your baby gets older, make the dinners increasingly more lumpy to help your baby learn to chew.








    Summer in a Bowl





    1 cup yellow squash, chopped


    1 cup zucchini, chopped


    1/2 cup apple, peeled and chopped


    1/2 cup red bell pepper, seeded and chopped





    Place all the ingredients in a steamer and steam for about 10 minutes, or until the apples are soft. Remove from the steamer and place in a blender or food processor and puree. The water content of the zucchini and squash will probably be enough to puree, but you may need to add a little of the cooking liquid for a smoother consistency. Keep refrigerated or frozen in cubes in a tightly covered container.





    Chicken Dinner





    1 cup water


    1 chicken breast, skinned and deboned


    1/4 cup rice


    3 carrots, sliced


    1/4 pound green beans





    Place the water, chicken breast, and rice in a covered pot and simmer for 20 minutes. Add the carrots and green beans and simmer another 10 minutes, or until the vegetables are tender. Puree the chicken meat in your blender or food processor with enough of the cooking liquid to make it moist. Add the carrots and beans, and more cooking liquid if necessary, and puree until smooth. Keep refrigerated or frozen in cubes in a tightly covered container.








    Pureed Carrots and Rice





    2 Tbs. raw brown rice


    6 carrots, (scrubbed %26amp; chopped into small pieces)


    1-1/3 cups water (or you can use broth or leftover cooking liquid from cooking vegetables)


    1 teaspoon sweet butter (optional)





    Place the rice and carrots in a saucepan along with the water and cover the pan. Simmer on the stove until the water is all absorbed. This takes about 30 to 40 minutes. When it is cool enough to handle, puree the mixture in your blender or food processor, (with the butter if you desire), until it is smooth. Keep refrigerated or frozen in cubes in a tightly covered container.








    Pureed Chicken and Vegetables





    1 Potato, cooked and chopped


    1 Carrot, scrubbed and chopped


    1/2 Zucchini, scrubbed, peeled and chopped


    1/2 Celery stalk, scrubbed and chopped


    1/4 to 1/3 cup chicken meat, skinless, boneless and thoroughly cooked





    Put all the ingredients in a saucepan and cover with cold water. Bring to a boil and simmer until everything is tender. Drain and puree the mixture in a blender or food processor along with enough of the cooking liquid to help with the blending. Keep refrigerated or frozen in cubes in a tightly covered container.








    Sweet Potatoes





    3 medium sweet potatoes (about 2 pounds)


    enough cold water to cover the sweet potatoes





    Peel the sweet potatoes, rinse, and slice into 1/4'; slices. Place the sweet potatoes in a saucepan. Add enough water to just to cover the potatoes. Cover the saucepan and bring to a boil over high heat. Once they are boiling, reduce the heat to medium-low and continue cooking for ten to fifteen minutes. The potatoes are done when a fork will easily pierce them. Drain the sweet potatoes and place them in your food processor adding enough liquid during the processing to achieve a smooth consistency. Keep refrigerated or frozen in cubes in a tightly covered container.








    I used sterilized ice cube trays to freeze the pureed foods. Each cube should be about one ounce. As soon as the food was frozen, I'd pop out the cubes and seal them up with my FoodSaver in the bags. Use them within two months.





    You can puree them as much or as little as you want, depending on how well your baby eats lumpy food and can chew.
    boiled and cooled softened carrots seem to be a favorite of my 13 m old. but any veggie or fruit cut into small pieces are good. An occasional hot dog is good to. just make sure (depending on there stage of tooth development) it is a swallow able size. I also introduced a baby fork at an early stage to help developmental progress. And always let them share with you!!

    My baby loved her homemade apple sauce. I'd take 4 granny smiths and 4 golden delicious, peel and core them, steam them in the microwave until soft, and mash them up. I used a blender when she was just starting out and started to mash with a fork as she got used to more texture. I'd also alternate between adding Cinnamon and nutmeg.

    Ok,... a few small tips before we go into recipes... what you should do is cut out regular soft drinks and replace them... so say either a glass of orange juice/diet soft drink a day and water otherwise, saves you a LOT of sugar and calories... swap regular bread for lebanese bread, still enjoying carbs but not overloading... if you have a pasta dish, have say half a plate of pasta and half a plate of either steamed veggies/salad so again not overloading... stirfries... have say a scoop of rice, a handful of meat and a STACK of veggies... Obviously avoid snacking on biscuits, potato chips, chocolate etc (try fruit instead or lite yoghurt if can eat it) and fried foods/takeout, excessive amounts of cheese etc.





    What I do is I have six days a week where I follow the above rules and one day as a ';cheat'; day to satisfy my cravings that have had all week, for example, I will have one takeaway/restaurant meal that day and regular softdrink as well as one snack I have been wanting all week. That way it makes teh rest of the week seem easier...





    As for meal ideas....





    Hearty chicken soup


    Ingredients


    Stock


    1.3kg whole chicken


    1 brown onion, chopped


    1 carrot, peeled, chopped


    2 large celery stalks, chopped


    10 whole black peppercorns


    2 dried bay leaves


    5 flat-leaf parsley stalks


    Soup


    2 teaspoons olive oil


    1 medium leek, trimmed, halved, washed, diced


    2 garlic cloves, crushed


    1 medium carrot, peeled, diced


    2 large celery stalks, diced


    1 medium (300g) swede, peeled, diced


    1 medium zucchini, diced


    1/4 cup chopped fresh flat-leaf parsley leaves


    crusty bread, to serve


    Method


    Make stock. Wash chicken under cold water. Pat dry with absorbent paper. Trim any excess fat from chicken. Place chicken in a large saucepan. Add onion, carrot, celery, peppercorns, bay leaves and parsley stalks. Pour enough cold water into pan to just cover chicken. Cover with lid. Bring to the boil. Reduce heat to low. Simmer, partially covered for 1 hour or until chicken is cooked through, skimming surface during cooking. Remove from heat.


    Carefully lift chicken from broth. Transfer to a plate. Strain broth through a muslin-lined sieve over a large heatproof bowl. Discard vegetables. Cool stock. Cover, refrigerate overnight.


    Meanwhile, remove and discard skin and bones from chicken. Shred chicken. Cover, refrigerate overnight.


    Make soup. Remove stock from refrigerator. Skim any fat from surface. Heat oil in a large saucepan over medium-high heat. Add leek and garlic. Cook, stirring, for 5 minutes or until leek is soft. Add carrot, celery and swede. Cook, stirring, for 5 minutes or until celery starts to soften.


    Add stock and chicken. Cover saucepan. Increase heat to high. Bring to the boil. Reduce heat to low. Simmer, covered for 30 minutes. Add zucchini. Simmer, covered for 30 minutes or until vegetables are tender. Remove from heat. Stir in chopped parsley. Serve soup with crusty bread.








    Thai Beef Stirfry (less meat, more veggies, substitute)


    Preparation Time 20 minutes


    Cooking Time 10 minutes





    Ingredients (serves 4)


    1 1/2 tbs peanut oil


    500g Heart Smart beef stir-fry strips


    2 carrots, cut into short thin sticks


    1 red capsicum, cut into thin strips


    1 stalk lemongrass, white part only, finely chopped


    4cm piece fresh ginger, thin sticks


    3 garlic cloves, crushed


    1 1/2 tbs soy sauce


    1 1/2 tbs sweet chilli sauce


    1 tbs lime juice


    2 cups bean sprouts


    1 cup fresh coriander leaves


    1 cup fresh mint leaves


    Steamed jasmine rice, to serve


    Method


    Add 1 tbs of oil to a wok on high heat. Add half the beef and stir-fry for 1-2 mins. Repeat with remaining beef.


    Heat remaining oil over mediumhigh heat. Add carrots, capsicum, lemongrass, ginger and garlic. Stir-fry for 2 mins. Add soy sauce, sweet chilli sauce and lime juice. Toss well.


    Return beef and toss through. Remove from heat and toss in half the coriander and mint. Serve with remaining coriander, mint and rice.








    Indonesian-style stir-fry (again substitute meat amounts for more veggies)


    Ingredients (serves 4)


    1 tbs vegetable oil


    600g rump steak, thinly sliced


    2 tsp ground coriander


    2 garlic cloves, crushed


    1 large carrot, cut into matchsticks


    1/4 cup (60ml) kecap manis*


    1/4 cup (60ml) rice wine vinegar


    150g snow peas, sliced


    1/4 small Chinese cabbage, thinly sliced


    Steamed rice, to serve


    Method


    Heat 2 teaspoons oil in a wok or large, deep frypan over medium-high heat. When hot, add half the beef and stir-fry for about 1 minute or until brown all over. Remove from pan and repeat with the remaining oil and beef.


    Reduce heat to medium and add coriander, garlic and carrot. Stir-fry for 1 minute or until fragrant. Add kecap manis, vinegar and snow peas and simmer for 2 minutes or until snow peas are bright green. Remove from heat and stir in beef and cabbage.


    Serve with rice.








    Spaghetti Bolognaise with salad/veggies or chilli con carne (just remember to portion it right)

    Yes it is a very dirty 4-letter word and should be eliminated from the language.





    Lets talk about lifestyle food plan instead. You cannot just lose the weight and then go back to the way you ate before. The weight will jump back twice as fast as it was to remove in first place.





    3 ounces is a serving of any meat product! Cook the meat any way you like it cooked, and whatever meat you like. Beef, Lamb, Chicken, Pork, Fish, all come in this catagory.





    Dark green leafy stuff is almost unlimited. 2 tea cups packed is a serving.





    tomato, celery, peppers, onions, olives, whatever else you like on your salad.





    Dressing on the side!! Always on the side, not poured over the salad. Have real dressing, not the vinegary sour low fat stuff that doesn't taste good.





    Any other green veggies you like! An amount the size of your clenched fist is a serving of cooked veggie and twice that is raw serving.





    Any fruits you like, same serving size as the veggies.





    Avoid root veggies, grain and cereal products, and limit most milk products.





    Remember you are setting an example for your daughter in all of this.





    Take her for a walk. Pram or carriage is fine. Nasty weather? have you ever walked in a museum? or a large store? It works too.





    Do be sure to have a ';cheat treat'; once a week. Just half a normal serving of something you have forbidden yourself. It prevents cravings and chucking the entire plan.

    If anything, change your eating habits for life.


    If you diet and cut out meals or anything like that, your body starts storing energy as fat cells and whatnot because your body thinks you're fasting. And when you stop dieting, you put the weight back on twice as fast because your body thinks you're going to need it when you fast again.


    So, eat everything in moderation. Try not to eat too late at night, because then you dont work it off from walking or anything
    The best thing you will ever do for yourself is to cut sugar and large amounts of sodium from your diet. If you can discipline yourself to prepare your own meals you will be amazed at how easy it is. All those pre-packaged frozen meals like Lean Cuisines and Smart Ones are convenient, but they can be packed with sodium to make them taste better and to help with preservation. Making your own meals allows you to control the ingredients.





    I usually start my day with a piece of fruit or yogurt and toast or a bowl of cereal. I snack on low fat cheese sticks and raw almonds. I like big salads for lunch. I make my own dressings, but you can buy some decent ones in the market. I stick to well-balanced dinners. I always think of my plate as a piece of art. I make sure that it has lots of color in it. Color, when it comes to natural foods, equals nutrition.





    PS- If I am craving something sweet or salty, I keep like 6 different varieties of 100 calorie packs around. It is a quick way to keep you going. They have soooo many different kinds. My sister-in-law buys them for her kids. They are a great way to allow your kids to snack without giving them too much sugar.





    Also, always, always, always, cheat once a week. My cheat day is Sunday. I let myself eat wings, pizza, or whatever I am craving. This helps to keep you grounded.





    If you don't have time to exercise, take your child outside to ride bikes, or walk around the block, or put her in a wagon and drag it behind you. There are plenty of ways to get exercise especially with kids.
    I'm not a real healthy eater, but I LOVE pasta and chicken. They are my vices - I don't think a person really needs to 'diet' but you can enjoy your food by making small changes which are more healthy for you.





    E.g. - For my pastas I use wholemeal pasta instead of white, it tastes exactly the same but is so much better for you. I also have gone from using cream based sauces, to tomato and vegetable based


    - For chicken, I bake my snitzels or kievs instead of frying or even *gasp* deep frying.


    -I don't use any oil what-so-ever for frying. It's unnecesary. I use non stick pans and a spray of canola oil which is so much healthier than using the liquid form


    -If you are craving takeaways, make them yourself! Pizza - buy a pizza base, add your toppings, whack it in the oven, and YUM pizza! Make your own burgers at home, using wholegrain rolls


    -When eating salad, go without the dressing or ask for it on the side





    - Most Asian style meals are quite healthy, just stay away from the battered meats or things like dim sims.


    Stir fry's are great, just buy a cheaper cut of beef (e.g. blade stake) or some chicken meat, cut it into strips and fry with some onion. Add your vegies (as many as you can!) I put in, brocolli, snap peas, carrot, capsicum and whatever else I can find in my fridge! Toss through some Hokkien noodles and soy sauce and you have a delicious and very easy to prepare meal while looking after your daughter!





    I know these aren't very special or interesting ideas, but they ARE healthy, like I said before, a full blown diet isn't really necesary, just eating regular, healthy meals with a bit of exercise each day and you'll lose 2 stone soon enough!

    fill yourself up with fluids everyday.. do try to drink 8 glasses of water and try to stay away from energy drinks and fruit juices. you wont need energy drinks if you are eating correctly. for snacks, eat fruits. i know its hard to not buy the chips, but fruits will help your cravings, and you don't have to feel guilty about making the wrong decisions. stay away from dark meat and try to eat alot of turkey, and chicken breast. red meat is okay but minimal. the key is fluids, and healthy snacks.. don't starve yourself, because you will want to eat more and you will start back at the beginning if you binge
    Always remember, the best diet is the one you make and can stick to. You already know what your doing wrong, so eat more of the right stuff and stay away from sweets and fried food. Good Luck! - R

    Ackee and Saltfish is a very tradtional jamaican dish that is easy to make. It's not one of my favorite jamaican dishes, but this recipe may impress her:


    Ingredients:


    1/2 lb Saltfish (dried, salted codfish)


    12 fresh ackees or 1 (drained) can of tinned ackees


    1 medium onion


    1/2 tsp black pepper


    3 tbsp of butter


    1/2 a hot chilli pepper (ideally Scotch Bonnet)


    1 sweet pepper


    1 chopped tomato


    1 sprig fresh thyme or 1 tsp dried thyme





    Cooking Instructions:


    Cover the saltfish in cold water. Let soak overnight (minimum 8 hours) changing the water several times (this removes most of the salt). Bring a pan of cold water to the boil and gently simmer the fish for 20 minutes (until the fish is tender). Chop the onion, sweet pepper, chilli pepper and tomato.





    Remove the fish from water and allow to cool. Remove all of bones and skin then flake the flesh of the fish. Melt the butter in a frying pan and stir fry the onion, black pepper, sweet pepper, chilli and thyme for about 3 minutes. Add the tomatoes and flaked fish and stir-fry for another 10 minutes. Add the Ackee and cook until hot throughout. Stir gently to avoid breaking-up the Ackee.
    Grilled Jerk Rubbed Whole Fish with Hot Vinegar (Escovitch) Sauce

    2 tablespoons ground coriander


    2 tablespoons ground ginger


    2 tablespoons light brown sugar


    1 tablespoon onion powder


    1 tablespoon garlic powder


    1 tablespoon kosher salt


    1 tablespoon habanero powder


    2 teaspoons coarsely ground black pepper


    2 teaspoons dried thyme


    1 teaspoon ground cinnamon


    1 teaspoon ground allspice


    1 teaspoon ground cloves


    1 red snapper, scaled and gutted


    Escovitch Sauce, recipe follows





    Preheat the grill to medium-high. Combine all of the spices in a medium bowl. Set aside half of the spice rub in an airtight container for another use; store at room temperature for up to 6 months.





    Rub both sides of the fish with the remaining half of the spice rub. Grill on both sides for about 4 to 5 minutes on each side, or until just cooked through. Remove from the grill and immediately pour the Escovitch sauce over the fish and serve.





    Escovitch Sauce:


    1 Spanish onion, halved and thinly sliced


    1/2 Scotch bonnet pepper, finely chopped


    1 1/2 cups white wine vinegar


    3 allspice berries





    Combine all ingredients in a small saucepan. Bring to a simmer over medium heat on the grates of the grill or on a burner. Simmer for a couple minutes and then pour over the fish.





    Fried Plantains





    4 cups vegetable oil


    4 ripe plantains, peeled and cut on the bias into 1/2-inch thick slices


    Salt


    Finely chopped cilantro, optional





    Heat oil to 365 degrees F in a heavy medium saucepan. Carefully add the plantains, in batches as necessary, and fry until golden brown, about 3 to 4 minutes. Remove with a slotted spoon to a paper towel-lined plate to drain. Immediately sprinkle with salt and cilantro, if desired.





    Jamaican Rice and Peas





    1 1/2 cups dried red kidney beans, soaked overnight and drained


    2 cloves garlic, smashed


    1/2 cup unsweetened coconut milk


    3 green onions, thinly sliced, plus more for garnish


    1 Scotch bonnet pepper, chopped


    3 sprigs fresh thyme


    1 1/2 cups long grain rice


    Salt and freshly ground pepper





    Place beans and garlic in a medium saucepan and cover with cold water. Bring to a simmer and cook until the beans are tender, about 1 to 1 1/2 hours. When the beans are tender, stir in the coconut milk, green onions, Scotch bonnet, and thyme, and increase the heat to a boil. Stir in the rice, cover the pot, and cook until the rice is tender and has absorbed most of the liquid. Transfer to a large serving bowl and garnish with sliced green onions.





    Rum Punch





    The saying is: 1 part sour, 2 parts sweet, 3 parts strong, and 4 parts weak.





    1 cup fresh lime juice


    2 cups grenadine syrup


    2 cups Jamaican white rum


    1 cup light rum


    2 cups fresh pineapple juice


    2 cups fresh orange juice


    Pinch freshly grated nutmeg, optional


    Orange slices, for garnish


    Pineapple slices, for garnish





    Mix all ingredients together in a pitcher or punch bowl. Chill in the refrigerator for at least 1 hour before serving. Garnish with orange or pineapple slices.

    Lots of soup and scrambled eggs. My grandfather, in his 90s, had problems like that. He ate a lot of graham crackers and chocolate chip cookies he dunked in milk.





    She might be able to eat orzo, which is a pasta that's shaped like big rice. He ate that sometimes.





    How about Rice a Roni? We made risotto using beef broth, rice and saffron, and he could eat that but you have to cook it a long time and it's kind of a pain. There's a brand in a bag that's pretty good...I think it's called Alessi. They also have lentil soup which would probably work. The hard part is making sure her nutrition is adequate while she can't eat.





    If you can make your own macaroni and cheese sauce, you could use the orzo for that. You could also over cook the macaroni for her.





    Maybe chili made with ground beef, not chunks of beef.





    You can make her hot chocolate using milk instead of water. I mean using the little packages. I'm sure you can make it from milk and cocoa, but I wouldn't know what to do after the milk was hot.





    Milk shakes and smoothies, and yogurt itself if she likes it, and cottage cheese if she likes that.
    Cottage cheese, oatmeal, poached eggs, chicken broth, plain tuna, mashed potatoes, spinach, pears and sweet potatoes.





    If you feel like she isn't getting enough nutrition, offer her an Ensure shake occasionally.

    In a salad bowl, toss spinach, lettuce, celery and onion; set aside. In a large skillet, cook bacon until crisp; remove with a slotted spoon to paper towels to drain. Discard all but 2 tablespoons drippings. In a small bowl, beat egg; add water and mix well. Add to the drippings. Combine vinegar, sugar, cornstarch, salt and pepper; add to skillet. Bring to a boil; stirring constantly. Remove from the heat; pour over salad. Add bacon. Toss and serve immediately. Serves 6-8





    GERMAN RED CABBAGE





    INGREDIENTS


    1 medium head red cabbage, cored and sliced


    2 large tart apples, peeled and sliced


    1 medium sweet onion, sliced and separated into rings


    1 1/2 cups water


    1 cup cider vinegar


    1/2 cup sugar


    1 tablespoon butter


    1 teaspoon salt


    6 whole peppercorns


    2 whole allspice


    2 whole cloves


    1 bay leaf


    2 teaspoons cornstarch


    2 teaspoons cold water





    DIRECTIONS


    In a Dutch oven, toss cabbage, apples and onion. Add water, vinegar, sugar, butter and salt. Place the peppercorns, allspice, cloves and bay leaf on a double thickness of cheesecloth; bring up corners of cloth and stir with kitchen string to form a bag. Add to Dutch oven. Bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours.


    Discard spice bag. In a small bowl, combine cornstarch and cold water until smooth; stir in cabbage mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Serves 6-8





    Kaese Spaetzle (german mac %26amp; cheese)


    INGREDIENTS


    1 1/2 cups all-purpose flour


    3/4 teaspoon ground nutmeg


    3/4 teaspoon salt


    1/8 teaspoon pepper


    3 eggs


    3/8 cup 2% milk


    3 tablespoons butter


    1 onion, sliced


    1 1/2 cups shredded Emmentaler cheese








    DIRECTIONS


    Sift together flour, nutmeg, salt and pepper. Beat eggs in a medium bowl. Alternately mix in milk and the flour mixture until smooth. Let stand for 30 minutes.


    Bring a large pot of lightly salted water to a boil. Press batter through a spaetzle press into the water. You may also use a potato ricer, colander, or a cheese grater. When the spaetzle has floated to the top of the water, remove it to a bowl with a slotted spoon. Mix in 1 cup of the cheese.


    Melt butter in a large skillet over medium-high heat. Add onion, and cook until golden. Stir in spaetzle and remaining cheese until well blended. Remove from heat, and serve immediately. Serves 8





    Raspberry Custard Kuchen


    INGREDIENTS


    1 1/2 cups all-purpose flour, divided


    1/2 teaspoon salt


    1/2 cup cold butter or margarine


    2 tablespoons whipping cream


    1/2 cup sugar


    3 cups fresh raspberries


    TOPPING:


    1 cup sugar


    1 tablespoon all-purpose flour


    2 eggs, beaten


    1 cup whipping cream


    1 teaspoon vanilla extract





    DIRECTIONS


    In a bowl, combine 1 cup flour and salt; cut in butter until the mixture resembles coarse crumbs. Stir in cream; pat into a greased 13-in. x 9-in. x 2-in. baking pan. Combine the sugar and remaining flour; sprinkle over crust. Arrange raspberries over crust. For topping, combine sugar and flour. Stir in eggs, cream and vanilla; pour over berries. Bake at 375 degrees F for 40-45 minutes or until lightly browned. Serve warm or chilled. Store in refrigerator, Serves 8-10

    INGREDIENTS


    1 tablespoon vegetable oil


    2 pounds ground beef


    1 small onion, chopped


    1 head cabbage, finely chopped


    1/2 teaspoon salt


    1/2 teaspoon ground black pepper


    36 frozen dinner rolls, thawed (I use refrigerator biscuits)


    2 quarts vegetable oil for deep frying





    DIRECTIONS


    Heat 1 tablespoon vegetable oil in a large pot over medium-high heat. Stir in ground beef, and cook until crumbly and no longer pink, about 5 minutes. Stir in chopped onion, and cook until the onion has softened and turned translucent, about 5 minutes more. Add the chopped cabbage; cook and stir until the cabbage has softened, about 10 minutes. Season with salt and pepper, then spread the mixture onto a baking sheet to cool until cool enough to handle.


    Once the mixture has cooled, flatten a dinner roll, and place several tablespoons of the cabbage mixture in the center. Pull the edges of the dough over the filling and pinch to seal. Repeat with remaining dough and filling.


    Heat the oil in a deep-fryer or electric skillet to 350 degrees F.


    Fry bierocks a few at a time in the preheated oil on both sides until golden brown, 5 to 7 minutes; drain on paper towels. Makes 36 rolls

    Chicken Stir Fry





    INGREDIENTS


    2 tablespoons peanut oil


    7 cloves garlic, minced


    1 teaspoon grated fresh ginger


    1 bunch green onions, chopped


    1 teaspoon salt


    1 pound boneless skinless chicken breasts, cut into strips


    2 onions, thinly sliced


    1 cup sliced cabbage


    1 red bell pepper, thinly sliced


    2 cups sugar snap peas


    1 cup chicken broth


    2 tablespoons soy sauce


    2 tablespoons white sugar


    2 tablespoons cornstarch








    DIRECTIONS


    Heat peanut oil in a wok or large skillet. When oil begins to smoke, quickly stir in 2 cloves minced garlic, ginger root, green onions and salt. Stir fry until onion becomes translucent, about 2 minutes. Add chicken and stir until opaque, about 3 minutes. Add remaining 4 cloves minced garlic and stir. Add sweet onions, cabbage, bell pepper, peas and 1/2 cup of the broth/water and cover.


    In a small bowl, mix the remaining 1/2 cup broth/water, soy sauce, sugar and cornstarch. Add sauce mixture to wok/skillet and stir until chicken and vegetables are coated with the thickened sauce. Serve immediately, over hot rice if desired.

















    Broccoli Pork Stir-Fry





    INGREDIENTS


    1 (3 ounce) package pork ramen noodles


    1 cup warm water


    2 teaspoons cornstarch


    1/2 teaspoon garlic powder


    1/4 teaspoon crushed red pepper flakes


    2/3 cup cold water


    1 1/2 teaspoons reduced-sodium soy sauce


    1 teaspoon white vinegar


    4 teaspoons canola oil


    1/2 pound pork tenderloin, thinly sliced


    6 large fresh mushrooms, sliced


    1 cup fresh broccoli florets


    1/2 cup julienned sweet red pepper


    3 green onions, sliced (white parts only)





    DIRECTIONS


    Set aside 1 teaspoon of seasoning from seasoning packet (discard remaining seasoning or save for another use). Break noodles into small pieces and place in a microwave-safe dish; add warm water. Microwave, uncovered, on high for 2 minutes. Drain and set aside.


    In a small bowl, combine the cornstarch, garlic powder, pepper flakes and reserved seasoning. Stir in the cold water, soy sauce and vinegar until smooth; set aside.


    In a large skillet or wok, heat oil; stir-fry pork and mushrooms for 5 minutes. Add broccoli and red pepper. Stir-fry for 4-5 minutes or until vegetables are crisp-tender and pork is no longer pink. Stir cornstarch mixture and stir into skillet. Add noodles and onions. Bring to a boil; cook and stir for 2 minutes or until thickened.




















    Chicken Enchiladas with Creamy Green Chile Sauce





    INGREDIENTS


    12 corn tortillas


    vegetable oil for pan-frying


    3 cooked boneless skinless chicken breast halves, shredded


    10 ounces shredded Monterey Jack cheese


    3/4 cup minced onion


    1/4 cup butter


    1/4 cup all-purpose flour


    2 cups chicken broth


    1 cup sour cream


    1 (4 ounce) can chopped green chiles, drained


    2 ounces shredded Monterey Jack cheese


    1/2 cup chopped green onions


    1/2 cup chopped fresh cilantro








    DIRECTIONS


    Preheat oven to 375 degrees F (190 degrees C).


    Heat 2 tablespoons of oil in a skillet over medium-high heat. Fry tortillas (one at a time) for 5 seconds on each side to soften and make them pliable. Add more oil to pan as needed. Drain between layers of paper towel and keep warm.


    Divide chicken, 10 ounces of Monterey Jack cheese, and onion among the 12 tortillas. Roll up each tortilla and place seam side down in a greased baking pan.


    Melt the butter in a saucepan over medium heat. Add the flour and whisk until mixture begins to boil. Slowly add the broth, stirring with a whisk until thickened. Mix in the sour cream and chiles, heat thoroughly but do not boil, stirring occasionally. Pour mixture over the enchiladas.


    Bake in pre-heated oven for 20 minutes or until heated through. Top with remaining Monterey Jack cheese and bake for 5 more minutes. Garnish with chopped green onions and cilantro.














    Chipotle Shrimp Tacos





    INGREDIENTS


    1 (12 ounce) package bacon, cut into small pieces


    1/2 onion, diced


    2 pounds large cooked shrimp - peeled, deveined, and cut in half


    3 chipotle peppers in adobo sauce, minced


    12 corn tortillas


    1 cup chopped fresh cilantro


    1 lime, juiced


    salt to taste








    DIRECTIONS


    In a large, deep skillet fry the bacon over medium-high heat until evenly brown. Drain the bacon fat. Add the onions to the pan with the bacon and cook 5 minutes or until the onions are translucent. Stir in the shrimp and chipotle chiles; cook 4 minutes or until heated through.


    Heat tortillas on an ungreased skillet over medium-high heat for 10 to 15 seconds. Turn and heat for another 5 to 10 seconds. Fill the heated tortillas with shrimp mixture. Sprinkle with cilantro, lime juice, and salt.

    Cut a loaf of French Bread into very thick slices. In each slice make a 3/4'; cut to make a pocket. Spoon 2 heaping ts chocolate into the pocket. Close pocket with a pinch of the bread.


    Place into greased 9x13'; baking dish. Mix up the eggs, milk %26amp; cinnamon/vanilla. Cover %26amp; refrigerate overnight.





    Preheat oven to 400F. Bake 20-25 minutes uncovered.

    1/3 cup graham cracker crumbs


    7 tablespoons marshmallow creme


    7 tablespoons milk chocolate chips

    Cook until bubbles break on surface. Sprinkle about 1 teaspoon graham cracker crumbs over each pancake. Turn; cook until golden. Remove from griddle.





    Spread about 1 tablespoon marshmallow creme over the crumbs side of each of 7 pancakes; sprinkle about 1 tablespoon chocolate chips over marshmallow creme on each. Top with another pancake, crumbs side down.

    Candy Bar French Toast


    12 slices day old bread


    3 Hersheys milk chocolate candy bars - no nuts


    3 eggs


    1 cup milk


    2 Tablespoons butter


    1 teaspoon sugar


    1 teaspoon vanilla extract


    1/4 teaspoon salt


    confectioner's sugar (for dusting at the end)


    Break each candy bar in half - the short way. Grate just a little chocolate (no more than a half teaspoon off of each piece and save in a small bowl for later.





    In a medium bowl, beat the eggs with the milk, sugar, vanilla, and salt. Pour half of this mixture into an large(13x9) ungreased baking dish.





    Layer six slices of bread horizontally over the egg mixture. Place one piece of candy bar in the center of each piece of bread. Top each slice with remaining pieces of bread like sandwiches. Pour the remaining egg mixture over the sandwiches. Let this stand for at least 5 minutes so the bread can absorb the egg mixture.





    On a griddle or in a large skillet, melt the butter over medium heat. Fry sandwiches until golden brown on both sides. Add an addition 2 teaspoons of butter mid-way, if cooking in batches.





    To serve, cut each sandwich diagonally. Dust with confectioner's sugar and sprinkle with chocolate shavings.

    10 large collard green leaves


    1 cup water


    1/4 cup butter or margarine


    2 medium onions, sliced


    1 medium green bell pepper, sliced


    2 tablespoons water


    1 teaspoon salt


    1 pound fish fillets (catfish, tilapia, red snapper)


    1/2 teaspoon salt


    1/2 teaspoon paprika


    1/4 teaspoon pepper








    1. Wash collard green leaves. Cut off long stem at the base of each leaf; carefully shave the remaining thick stem. Chop leaves. In 2-quart saucepan, heat 1 cup water to boiling. Add chopped collard greens. Boil 15 to 18 minutes or until softened; drain. Pat dry with paper towels.


    2. In 4-quart Dutch oven, melt butter over medium-high heat. Cook collard greens, onions, bell pepper, 2 tablespoons water and 1 teaspoon salt in butter 4 to 6 minutes, stirring occasionally, until onion is crisp-tender.


    3. Cut fish into 3x3/4-inch strips; add to vegetables. Sprinkle with 1/2 teaspoon salt, the paprika and pepper. Cover and simmer 6 to 8 minutes or until fish flakes easily with fork. Serve in large pasta bowls.

    Pre heat oven to 450 degrees





    6 tilapia, cod, or cat fish fillets


    1 1/4 cup Alfredo sauce


    3/4 cup Parmesan cheese


    3/4 cup Italian bread crumbs


    3 Tbsp vegetable oil





    Combine Parmesan cheese, bread crumbs, and oil.


    Place fish fillets in a shallow non-stick baking pan


    Spread 3 Tbsp of the Alfredo sauce on each fillet


    Sprinkle 1/3 cup of the cheese mixture on each fillet and firmly pat over the Alfredo sauce





    Place in oven and bake for 10 minutes or until fish read 150 degrees





    My wife makes this with roasted vegetables. She cuts up zucchini, squash, and peppers, sprinkles Italian seasonings, salt garlic and bakes it at the same time with the fish. Sometimes she uses rice, other times angel hair pasta.
