SHRIMP WITH SPICY CHILI AND BEER SAUCE


';Caribbean food has become a real favorite of mine,'; writes Cindy M. Wright of Tarzana, California. ';I just love the flavors of this spicy cuisine. One of the best places in my area is Cha Cha Cha in Encino. I've enjoyed everything I've had there, but I especially like the shrimp and rice dish called camarones ******.';


6 tablespoons (3/4 stick) butter


6 large garlic cloves, chopped


2 teaspoons finely ground black pepper


2 teaspoons dried thyme


1 1/2 teaspoons cayenne pepper


30 uncooked large shrimp, peeled, deveined


2 cups Jamaican lager or other lager beer


6 cups low-salt chicken broth


1/2 cup Worcestershire sauce


1 tablespoon honey


Freshly cooked white rice





Melt 6 tablespoons butter in heavy large skillet over medium-high heat. Add chopped garlic, black pepper, dried thyme, and cayenne pepper and stir 1 minute. Add shrimp and saut茅 1 minute. Stir in beer. Using slotted spoon, transfer shrimp to large bowl. Add chicken broth, Worcestershire sauce, and honey to skillet and boil until sauce is reduced to 1 1/4 cups and coats spoon thinly, about 45 minutes. Return shrimp to sauce and simmer until shrimp are just cooked through, about 3 minutes. Season to taste with salt. Serve with rice.





Makes 4 servings.

BEER BATTER BREAD

3 cups flour


1 tablespoon baking powder


3 tablespoons sugar


1 teaspoon salt


1 bottle (12 ounces) beer, at room temperature


1/4 cup unsalted butter, melted





Preheat the oven to 375掳F. In a mixing bowl, combine all the dry ingredients. Add the beer all at once, mixing as little as possible; the batter should be lumpy.


Pour the batter into a 9-x-5-x-3-inch loaf pan and brush with the melted butter. Bake in the oven for 35 to 40 minutes, or until an inserted skewer comes out clean. Turn out onto a rack to cool.





Makes 1 loaf.

ONION AND GARLIC BEER SOUP


For a different take on onion soup, a traditional beef-broth base is here spiked with beer and fortified with garlic. Rye-bread croutons top this simple soup, which, with the addition of a salad, makes a fine fall supper.


4 pounds onions (about 10), sliced thin


4 large garlic cloves, minced


2 tablespoons olive oil


a 12-ounce bottle of beer (not dark)


5 1/4 cups beef broth


2 tablespoons sugar


2 tablespoons unsalted butter


4 slices of day-old rye bread, crusts discarded and the bread cut into 1/2 inch cubes


freshly grated Parmesan as an accompaniment





In a heavy kettle cook the onions and the garlic in the oil over moderate heat, stirring occasionally, until the mixture is browned. Stir in the beer and the broth, simmer the mixture, covered, for 45 minutes, and stir in the sugar and salt and pepper to taste. While the soup is simmering, in a heavy skillet melt the butter over moderate heat, add the bread cubes, and cook them, stirring, until they are golden. Divide the soup among 6 bowls and top it with the Parmesan and the croutons.





Makes about 12 cups, serving 6.

Beer Butt Chicken





1 - 4 Lb. Fryer Chicken


3/4 Can of Beer


Cavender's Greek Seasoning or Tony Chacherez Cajun Seasoning


Vegetable Oil


Non-stick Cooking Spray


Directions:


Rinse chicken and remove gizzard, neck, etc. Sprinkle the chicken, inside and out, heavily with seasonings. Spray beer can with non-stick cooking spray. Put chicken on top of beer and set on grill using indirect heat for 1 hour. Rub on some vegetable oil and finish cooking until browned all over (an additional 20 - 30 minutes), AND juices run clear. Total time on the grill is about 1 1/2 hours.
my cousin makes this beer can chicken thats sooooo good.. i'm not sure of the recipe or anything.. but as far as i know... you just stick a can of beer in a chicken and bbq it
if you know what baklava is, try finding a recipe for it but you can add a little beer in it. i know cause my mom did it before.
Welsh rarebit contains beer, as does some tempura batter recipes.

we make the dough for fish (fish n chips) out of flour and beer....reeeeally nice (/but reaaaaally unhealthy)
Not sure where you're from, but if you cook fajitas on the grill, you can pour some beer on the fajitas to give them a better taste.
well there is a soup called beer and bratwurt soup. its really yummy. and there is is type of fruitcake that has beer in it too.

INGREDIENTS:


1 (18.25 ounce) package yellow cake mix


1 (3.5 ounce) package instant vanilla pudding mix


1 cup beer


1/4 cup vegetable oil


4 eggs

DIRECTIONS:


Preheat oven to 350 degrees F (175 degrees C), grease and flour a 10 inch Bundt pan.


Combine cake mix and pudding mix in a large bowl. Add beer and vegetable oil and mix lightly. Add 4 eggs. Beat at high speed until mixture is thick, creamy and smooth. Pour into greased and floured Bundt pan.


Bake at 350 degrees F (175 degrees C) for 55 minutes. Cool in pan for 10 minutes, then turn out onto a wire rack and cool completely. Frost as desired.


this is a simple one.... there are alot of them the beer is used as a leavening agent in these type of recipes

My fav is beer chicken,, wash the bird and stick it on an open can of beer,, the tall cans work best, either bake or grill till done.

Beer cheese soup and beer battered fried fish
Beer bread, but its pretty nasty. Try Drunken Chicken. Stick an open can of beer in a whole chicken, stand it up on the grill and cook until all the pink is gone. Perfection.
So many recipes call for the use of beer. The best web site to find them would be recipesource.com. I know there are bread recipes, not too sure about cakes and cookies though.
I actually have a complete cookbook somewhere with only beer recipies in it.
