Food Recipes?

I don't have much time in the day so I was wondering if there is anyone out there that could spare me a few quick yet delicious recipes for dinner. I like all foods so I am not difficult. I just would like to make a dinner were I don't have to spend the rest of my evening cooking and can have more time for my family. Thank you for any help you could assist me in :)Food Recipes?
BAKED STUFFED EGGPLANT:


2 large eggplants


16 oz. mushrooms, sliced


1 Tablespoon oil


1 1/2 lbs. lean ground beef


1 large onion, chopped


2 (8 oz.) cans tomato sauce


1/2 teaspoon garlic powder


1/4 teaspoon pepper


1/4 teaspoon oregano


12 oz. mozzarella cheese, shredded


Wash and cut off stem of eggplants; cut in half lengthwise. Scoop out leaving 1/2-inch shells; cube centers. Arrange eggplant shells in baking dish.


In large skillet, saute eggplant cubes and mushrooms in oil for 6-8 minutes or until tender; and set aside.


In same skillet, brown ground beef and onion; drain off excess fat. Add eggplant mixture, tomato sauce, garlic powder, salt, pepper and oregano. Simmer for 5 minutes, stirring occasionally.


Spread eggplant-meat mixture into the eggplant shells and top with mozzarella cheese.


Bake at 350 degrees for 30 minutes, or until heated thoroughly. Let stand 5 minutes before serving.





TURKEY TETRAZZINI


2 cups cooked turkey, diced


1/4 cup margarine or butter


1/4 lb to 1/2 lb. fresh mushrooms, sliced


1/4 cup flour


2 cups chicken broth


2 Tablespoons dry Cooking Sherry


1 cup evaporated milk


salt and pepper to taste


8 ounces cooked spaghetti, drained


1/2 cup parmesan cheese, grated


Melt margarine, add mushrooms and cook 5 minutes. Stir in flour. Add chicken broth, sherry and milk. Stir and cook until mixture boils and thickens.


Season to taste. Remove from heat.


In 2-quart buttered casserole, put alternate layers of spaghetti, turkey, and mushroom sauce; finishing with spaghetti. Sprinkle top with grated Parmesan cheese.


Bake at 400 degrees for 20 to 25-minutes or until bubbly.


Note: you may substitute cooked chicken for turkey.





SPAGHETTI SUPERB


1 lb. ground beef, browned and drained


1/2 cup onion, chopped and sauteed


1/4 cup green pepper, chopped and sauteed


2 Tablespoons oil


1 can Condensed Tomato Soup


1 can Condensed Cream of Mushroom Soup


1 can water (measured from soup can)


1 clove garlic, minced


1/2 lb. spaghetti, cooked and drained


1/2 cup shredded Sharp Cheese


In a large skillet, saute onion and green pepper in oil;


add ground beef and brown until thoroughly cooked. Drain off grease.


Add tomato soup, cream of mushroom soup, water and garlic to meat and heat.


Stir in cooked spaghetti.


Pour into large casserole dish and top with the shredded cheese.


Bake at 350 degrees for 30-35 minutes or until the cheese has melted and is bubbly.Food Recipes?
Easy and Good Chicken: 4 boneless chicken breast, 2 cans of cream of chicken soup, 4 slices of swiss cheese, Stove top (or off brand) canister of stuffing. Oven at 350 or 325 if using a glass pan. Put chicken in 13x9 pan, top with one piece of swiss cheese, mix two cans of water with cream of chicken soup, pour over chicken, put stuffing over all and cover with foil and bake 45-60 mins. until chicken reaches safe temp. Let rest for 5 mins and serve. It is a full meal in a flash for those last minute guests or a quick meal. I just add a veggie for a side dish. ENJOY!!!





For dessert: 1 large container of vanilla yogurt, 1 jar of sugar free preserves of your choice, and regular container of lite cool whip. Mix yogurt and preserves, then cool whip. Chill. Or you can freeze for later and thaw for 1 hour before serving. Delicious lite dessert in a flash
thats a very diverse topic, if you like chicken just buy a jar of the ready made alfredo sauce, some fetticuine noodles, and boneless skinless chicken breast. cut the chicken into pieces, saute it in butter until it's white and done in the center, boil the noodles, add the jar of sauce, mix it all together and you're done.





I am the queen of crockpot cooking and have found so many ways tocook in it. You can make meat loaf, stew, roast, cabbage and corned beef, beanie weanie, you name it, you just cook it a bit before you go to bed, toss it all in the pot, set the pot in the fridge until morning, put the pot on low before you go to work, dinner is served when you come home. I usually make meatballs with onions and peppers in the oven, rather than frying, I'll just bake them long enough to brown them a bit, then dump the entire contents of my cookie sheet into a crock pot, cover it with sauce and let em sit on low all day at work, come home all i have to do is boil some noodles and dinner is served. It's all in preparation ahead of time really. I try not to spend to much time while my niece and nephew are up in the kitchen. The less time in the kitchen we spend the less mess i have to clean up later as my niece never understands why she can't continue to play with that sprayer on teh sink lol. Anyway, good luck to ya

1 mixing bowl, 1 mixing utiensil, 1 cooking pan





Simple, fairly quick, and tastes great.





EGG %26amp; CHILI CASSEROLE





10 eggs


1/2 C butter


1/2 cup flour


2 four oz. cans chopped, mild green chilis (Ortegas)


1 tsp salt


1 pint cottage cheese (small or large curd)


1 1/2 lb mont. jack cheese (shredded)





Grease 9x13 pan lightly.





Whip eggs until blended.





Add remaining ingredients.





Stir together.





Pour into pan.





Bake at 350 until set. (30-45 min.)

Chicken Brocolli Rice





INGREDIENTS:


2 cups cooked rice


frozen broccoli


1 can of chicken (like swanson)


1 can of cream soup


Cubed Velvetta cheese


PREPARATION:


Mix all ingredients; bake 20 minutes or so at 350 degrees.








Easy Cubed Steak








INGREDIENTS:


4 Beef Cubes Steaks


Salt and Pepper to taste


Worcestershire Sauce, to taste


PREPARATION:


Makes 4 servings.


Spray a baking dish with Pam; throw in the cubed steak pieces and season with salt, pepper and Worcestershire sauce. Place in a 375 oven.





After 15 minutes I turned the pieces over and let cook another 15 minutes





Sloppy Joes





I've tried so many different recipes for Sloppy Joes, and this one is my favorite with a sweet and tangy flavor.





INGREDIENTS:


1-1 1/2 pounds ground beef


2 or 3 celery stalks, chopped


1 can tomato soup


1/2 can of water


About 3 or 4 tablespoons ketchup


About 2 or 3 tablespoons brown sugar


About 2 or 3 tablespoons vinegar


PREPARATION:


Brown ground beef and celery. Add remaining ingredients, bring to a boil, then simmer for about 10 minutes. (Add enough water to bring it to the thickness you want.) Serve on buns with sliced cheese, if desired








Quick Goulash





INGREDIENTS:


1 pound ground beef


1/2 -1 Chopped onion


1-2 Chopped green peppers


Salt and Pepper to taste


1 can tomato sauce


Cooked macaroni (about 8 ounces dry)


Shredded cheese


PREPARATION:


Brown ground beef; add chopped onions, green peppers, a can of tomato sauce, 1 can water, salt and pepper cook for about 15 minutes.


Add cooked macaroni and shredded cheese. Serve with some salad or maybe some green beans and you have a quick dinner.











Pasta Cheese Casserole








This meatless casserole can be served with garlic bread and salad for a complete meal.


INGREDIENTS:


1 can diced tomatoes (I use the wide fat can to have enough for leftovers 28oz I think it is)


1 can mushroom pieces


diced onion and green pepper to taste (or just use the chunky Italian tomatoes)


cooked pasta of choice (we like shells or the spirals)


shredded cheese of choice


PREPARATION:


Preheat oven to 350 degrees. Place the pasta in a baking dish; add the tomatoes and other veggies. Stir. Top with cheese. Bake until cheese is melted, about 20 minutes. I also like to do this with a container of ricotta or cottage cheese stirred in as well. Serve with garlic bread and salad.

Apple Delight

2 (21 ounce) cans apple pie filling


1 (18.25 ounce) package yellow cake mix


1/2 cup butter, melted

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8 inch square pan.


In a large saucepan, melt 1/2 cup butter. Remove from heat, and stir in sugar, eggs, and 1 teaspoon vanilla. Beat in 1/3 cup cocoa, 1/2 cup flour, salt, and baking powder. Spread batter into prepared pan.


Bake in preheated oven for 25 to 30 minutes. Do not overcook.


To Make Frosting: Combine 3 tablespoons butter, 3 tablespoons cocoa, 1 tablespoon honey, 1 teaspoon vanilla, and 1 cup confectioners' sugar. Frost brownies while they are still warm.

1/2 teaspoon baking powder

1 (11 ounce) package REESE'S庐 Peanut Butter and Milk Chocolate Chips, divided


3/4 teaspoon shortening

DIRECTIONS:


Heat oven to 350 degrees F. Grease 13x9x2-inch baking pan.


Stir together butter, sugar and 1 teaspoon vanilla in large bowl. Add 2 eggs; stir until blended. Stir together flour, cocoa, baking powder and salt. Add to egg mixture, stirring until blended. Spread in prepared pan. Bake 20 minutes.


Meanwhile, stir together sweetened condensed milk, peanut butter, remaining egg and remaining 1 teaspoon vanilla extract. Pour evenly over hot brownie. Set aside 2 tablespoons chips; sprinkle remaining chips over peanut butter mixture. Return to oven; continue baking 20 to 25 minutes or until peanut butter layer is set and edges begin to brown. Cool completely in pan on wire rack.


Place reserved chips and shortening in small microwave-safe bowl. Microwave at HIGH (100%) 30 seconds; stir. If necessary, microwave at HIGH an additional 15 seconds at a time, stirring after each heating, until chips are melted and mixture is smooth when stirred. Drizzle over top of bars. When drizzle is firm, cut into bars. Store loosely covered at room temperature.





Candy Bar Brownies





INGREDIENTS:


1 (18.25 ounce) package German chocolate cake mix


3/4 cup melted butter


2/3 cup sweetened condensed milk


4 (2.16 ounce) bars chocolate-coated caramel-peanut nougat candy, chopped

DIRECTIONS:


Mix cake mix with melted butter or margarine and condensed milk. Spread out 1/2 of the mixture into a 9 x 13 inch pan.


Bake at 350 degrees F (175 degrees C) for 10 minutes.


Slice candy bars into little slices. Lay these on top of the baked crust. With the remaining batter-crumble it on top of the candy bars. It will have a crumbly texture. No need to spread it on top to make it smooth.


Put it back into the oven and bake it for another 20 minutes.

1-Pot, 3-Bean Chicken Stew











INGREDIENTS:


1 tablespoon canola oil


1 3/4 pounds boneless, skinless chicken breast or thighs, cut in chunks


1 large yellow onion, chopped


1 cup sliced celery


1 cup thinly sliced carrots


3 cups no-salt-added chopped tomatoes


1 (14.25 ounce) can fat-free, less-sodium chicken broth


1 (15 ounce) can no-salt-added black beans


1 (15 ounce) can no salt-added navy beans


1 (15 ounce) can no salt-added kidney beans


1 cup dry red wine


1 bay leaf


1 tablespoon Italian herbs


1 cup smoked chicken breast, cubed


1 cup fresh Italian parsley, chopped


1 cup fresh cilantro, chopped

DIRECTIONS:


Heat oil in a large pot; brown chicken. Remove chicken and set aside. Saute onions until soft, about 5 minutes. Add broth, beans, tomatoes, celery, carrots, wine, bay leaf, herbs and all the chicken; cover and simmer for 40 minutes.


Add parsley, cilantro, salt, and pepper, and simmer 5 more minutes





Chicken and Rice Soup





INGREDIENTS:


3/4 cup chopped celery


3/4 cup finely diced onion


1 cup uncooked white rice


2 cubes chicken bouillon


2 1/2 cups water


1/2 cup butter, melted


4 tablespoons all-purpose flour


2 cups milk


1 1/2 cups chopped, boiled chicken


1 cup milk


ground black pepper to taste

DIRECTIONS:


Cook celery, onion, rice, bouillon, and water about 20 minutes or until most of the water is absorbed by the rice. Remove from the heat.


Make a cream base: Combine butter and flour in a small skillet, making a paste. Add 2 cups milk and stir to make a smooth sauce.


Add cream base to the rice mixture. Add chicken and 1 cup milk. If the soup seems thick, add more milk. Add pepper to taste and serve hot.

1 (2 to 3 pound) whole chicken, cut into pieces


1 pound smoked sausage, sliced


3 green bell peppers, diced


2 onions, diced


5 cloves garlic, minced


2 (14.5 ounce) cans peeled and diced tomatoes


1 tablespoon chili powder


1/2 teaspoon hot pepper sauce


1/2 teaspoon ground cayenne pepper


1 teaspoon Worcestershire sauce


5 bay leaves


1 (6 ounce) can tomato paste


1 cup uncooked white rice

DIRECTIONS:


Place chicken and sausage in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until chicken is opaque and falls from the bone, 45 minutes. (I usually do this the night before and refrigerate to skim the fat.) Remove chicken and sausage, reserving broth. Shred chicken.


In a large pot over medium heat, cook bell pepper, onion and garlic until onion is translucent, adding reserved chicken broth if necessary. Stir in tomatoes, chili powder, pepper sauce, cayenne, Worcestershire and bay leaves; reduce heat and simmer 15 minutes.


Stir the shredded chicken, sausage and tomato paste into the spiced vegetables. Continue to simmer until flavor is as spicy as you like, adding reserved liquid as needed to thin.


Stir in 1 cup reserved liquid with the rice. Simmer 20 minutes, until rice is tender. Serve or continue to simmer, as desired.

SPICY SHRIMP COCKTAIL


2 lb shrimp, cooked, peeled and deveined. Chilled.


4 med tomatoes, diced


1 bu cilantro, finely chopped


1 fresh jalapeno, diced


2 cloves garlic, crushed


1 onion, diced


1 large avocado, diced.


1 large bottle ketchup


1 jar cocktail sauce, hot or mild


hotsauce, like tabasco or tapatio


6-8 lemons


saltine crackers





In a bowl, add shrimp and squeeze lemon juice from 1 or 2 lemons on it. Put back in fridge.





In a large stock pot, add 4 cups cold water.


Add the entire bottle of ketchup, cocktail sauce, cilantro, jalapeno, garlic, onion, tomatoes. Stir content until completely mixed.





Squeeze 4 lemons into the mix. Add hot sauce to the mix according to taste. If you like it hot, add 6-10 tsp. If you want it mild, add a 3-4 shakes (approx 2 tsp).





In a bowl, Add the tomato mixture into the mug then add a serving of the chilled shrimp and serving of avocado. Serve chilled and with crackers.





To make the cocktail hotter, add more hot sauce.


To make tangier, add more lemon juice and ketchup.





Serves 4-6

MAGDALINAS VALENTINE CHICKEN





4 boneless skinless chicken breast


2 cans Campbell's condensed golden cream of mushroom soup


1/4 chopped yellow onion


milk (1) one soup can's amount





flour seasoned with garlic powder, season salt, pepper, and (dill weed) optional.





Season and flour 4 chicken breasts and fry in skillet with vegetable oil till done.





Drain and remove excess grease from skillet.





Combine chopped onion, milk, Campbell's condensed golden cream of mushroom soup, 2 tbsp of seasoned flour in skillet with cooked chicken breasts.





Simmer on medium heat till onions are soft.

NICK'S SPAGHETTI SAUCE





olive oil


1/2 pkg jimmy dean spicy hot sausage


1/2 pound ground beef


1/2 chopped yellow onion


1 small can mushroom stems and pieces, diced


1 large can hunts brand spaghetti sauce with mushrooms


1 large can hunts brand spaghetti sauce with meat


2 cloves garlic, peeled and cut on ends


Italian seasoning


2 bay leaves


1 dash salt (to taste)


1 dash sugar (to taste)





Heat some olive oil in bottom of a large kettle then, add sausage and beef together and brown meat.





Then add the chopped onions and the mushrooms and saute to cook down and remove excess moisture.





When the onions get transparent and have cooked down add cans of sauce and seasonings. Then reduce heat to a low simmer and cook till small boil point. Careful to stir continually so as not to burn the sauce on the bottom of pan.





Serve over your favorite pasta or use for manicotti or lasagna.
Hi! Like you, I also don't like to spend a long time in the kitchen. Actually, even on weekends I try to get in and out of the kitchen while still being able to prepare a healthy meal for my family!


This is what I prepared for dinner tonight: (you can substitute the beef for chicken if you don't like red meat)!





1 bag of frozen stir-fry veggies


2 Beef Steaks (the thicker the better)


1/2 onion


5 teeth of garlic


3 soup spoon's of tomato paste


1 cup of water


Tabasco Sauce


Salt (add to taste)


Pepper (add to taste)


Dry Seasoning (whatever you have on your pantry...I like to use onion powder, garlic salt and crushed red pepper-also add to taste).





How to prepare it:





Heat olive oil in a large frying pan. Add meat and stir fry until lightly brown. Add diced onions and garlic. Add tabasco sauce and tomato paste . Add one cup of water. Let it cook for a few minutes. Add bag of frozen veggies. Let it simmer in low heat for 10-15 minutes. Add salt, pepper and dry seasoning to taste while broth thickens.





I serve this with some couscous but it's wonderful with white rice as well. It's a very colorful and surprisingly healthy dish.





The whole time to prepare and cook this mean is approximately 25-30 minutes. It feeds about 4 people.

Lobster Curry





Ingredients





1 tbsp olive oil


1 lobster tail, removed from shell and diced


pinch medium curry powder


pinch turmeric


pinch cumin seeds


pinch ground ginger


1 tbsp flatleaf parsley, chopped


150ml double cream


1 tsp tomato pur茅e


lime wedges, to serve





Method





1. Heat the oil in a pan and fry the lobster pieces for a few 1-2 minutes. Stir in the spices and then add the parsley to the pan. Heat for 1-2 minutes, to allow the flavours to develop.





2. Pour in the cream and add the tomato puree. Simmer gently for a few minutes, stirring occasionally.





3. To serve, spoon the curry onto a serving plate (or alternatively, serve in the lobster tail which has been heated in a pan until pink) and serve the lime wedges alongside.
