i would prefer a dessert but it doesn't have to be one.What are some easy spanish food recipes that i can make?
Spanish? Or Mexican? I spent a semester in Spain and I've found that their traditions of tapas (or ';pintxos';) has successfully migrated here to the States. They're like elaborate fingerfood. In northern Spain, they tended to be based in seafood and since I don't much care for fish, my favorite became croquetas. (However, I believe croquetas are originally of French origin: ';croquettes.'; Check out the tapas links below.)





But after spending a couple of years on the TX - Mexico border, I discovered my real favorite food: chalupas.





Make or buy refried beans. Buy SOFT corn tortillas from the refrigerated section at your grocery store (I get them at Wal-Mart). Fry these tortillas in oil on your stovetop (I use canola). Leave them a little soft or really crunchy--whatever you like (this is also how you can make ';homemade'; tortilla chips that are amazing). Put a layer of warm refried beans on top and top that with cheese, tomato, avocado, pickled jalapenos, anything you like. It's not hard and it's delicious.

For a unique drink, (if you are of age) try a Kalimotxo (another Basque tradition). It's Coke and red wine.

******SOUTHWEST CHICKEN QUESADILLAS


FILLING:


4 cooked chicken breasts


1/2 sm. onion, chopped


2 cloves garlic, chopped


1/4 green pepper, diced


2 fr. jalapeno peppers


1/2 sm. can sliced mushrooms


4 oz. Monterey Jack cheese, grated


1/2 jar taco sauce


Place 2 tablespoons olive oil in frying pan with the onion, garlic, green pepper, jalapeno pepper, and mushrooms. Cook 1 minute. Do not let garlic brown. Add 1/2 jar taco sauce. Cook about 1 minute. Add shredded chicken; toss to coat. Add Monterey Jack cheese; cover and simmer 5-10 minutes until chicken is hot and cheese is melted.


Place 1 tablespoon olive oil in a skillet. Heat on medium until very warm. Place flour tortillas in pan and warm both sides. Place tortilla on a plate and fill one side with chicken-cheese mixture. Fold over to cover mixture. Top with salsa, about 1 1/2 tablespoons sour cream and a few black olive slices. Serve with lettuce and tomatoes, refried beans, or rice and beans.
