What are some of your favourite Mexican food recipes that you could suggest?

Well, I'd check out some of Diana Kennedy's books on Mexican cooking. Her stuff is really involved...almost too involved...lol.





My husband is mexican....I cook mainly mexican food, and make everything from scratch..mexican AND american.





The things I have made from d. kennedy's books turn out great, but my husband always says: ';We don't make THAT kind of food in Jalisco (where is is from)!'; However, my husband LOVES what I make regardless of whether he has ever eaten it before.





I can recommend ensalada de chicharrones (really really simple recipe) from her book, as well as pollo en mole rojo sencillo (but I use pork instead of chicken).





Also, try to get an out of print book by ORTHO, of all publishers, called ';Adventures in Mexican cooking';. It is VERY authentic, and is full of mexican homestyle cooking, from yucatec food all the way up to the norteno style of cooking. You can probably find it on ebay.





If you like complicated stuff, I'd recommend learning to make chicken tamales in banana leaves. It is pretty much a veracruz style tamal, but you really need to spend a day in the kitchen with someone who knows how to make them. Explaining in writing how to make them would be futile.





Hope you get to try some of those recipes. (diana kennedy's recipes for tamales are a little ';overworked';, by the way)What are some of your favourite Mexican food recipes that you could suggest?
You didn't mention the level of cooking experience you have, but if you are new to cooking here's an easy one that is a crowd pleaser.





Open Faced Tacos





1 large bag regular Fritos corn chips


1 lb of ground meat


1 package Lawry's Taco Seasoning Mix


1 head of lettuce shredded


1 small white onion diced


1 can sliced black olives


1 16oz package shredded mexican cheese


1 pint sour cream


1 jar of Pace picante or chunky salsa sauce





Brown the ground meat and add the taco seasoning mix per the instructions.





Layer on a plate, a handful of Fritos, a half a cup of the ground meat, the shredded lettuce, a handful of the cheese, a few onions, olive slices and a couple of Tbsp of sour cream. Top with the amount of picante or chunky salsa to taste.

Abondigas soup


its easy





sweat some veg of your choice, I like carrots, onion and zucchini.





Add some stock or broth of your choice,





make some meat balls with ground beef, some rice and herbs and spices...basic ones will do.





add those meat balls to your soup along with some more rice and simmer until the meatballs are cooked though and the rice is done.





garnish with cilantro and serve with hot tortilla's

Verde Spanish Rice!





1 cup of rice


1 bunch frest cilantro


1 bunch fresh green onions


1 can of chicken broth or chicken boullion


1 tsp of oil


1 pinch of salt


1 pinch pepper


1 crushed fresh garlic clove


1 blender


1 saute pan





In blender add, green onions, cilantro and chicken broth, puree





In saute pan, add oil, salt, pepper, garlic and brown the rice over medium heat.





Add green puree and simmer for 20 mintues!!





Verde Spanish Rice!! Deliciso!!

Recipes for babies who are happy eating from a spoon








Beef and green beans





Excellent source of iron





100g fresh beef lean mince


50g trimmed green beans, cut into 0.5 cm pieces


160g potatoes, cut into 8 pieces





Fry the beef without added fat in a non-stick pan until lightly browned, then add 1 tbsp water. Cook the potatoes in a pan, steaming the beans in a sieve over them for around 8 minutes until tender. Place the beans and beef in a blender and whizz together with 1 tablespoon water until smooth. Mash the potatoes with 2 tablespoons water or baby's usual milk. Mash in the bean and beef mix.





Apple and raspberry pur茅e





Vegetarian


Good source of vitamin C





100g raspberries


1 large Cox apple, peeled, cored and diced





Place in pan and cook over a low heat for 5-8 minutes until soft. Pur茅e and sieve out seeds. Serve just warm.





Sweet potato and butternut squash mash





Vegetarian


Good source of betacarotene





1 sweet potato


1 small butternut squash





Peel and dice both vegetables, and boil or steam until tender.


Mash together with a little of baby's usual milk until a suitable consistency.





Avocado and banana mash





This is a brilliant meal for when you're on the move, as it's quick and easy to make and doesn't need any cooking. It doesn't keep, so what baby doesn't fancy, eat yourself!





Vegetarian


Good source of vitamin E and potassium





1 ripe banana


1 small ripe avocado





Mash together well and serve at once.





Petit pois pur茅e





Vegetarian


Contains iron


Good source of vitamin C





75g petit pois


1 tbsp baby rice





Simmer the petit pois until just tender. Pur茅e with a little cooled boiled water or baby's usual milk, and stir in baby rice.





Broccoli and cornmeal mash





Vegetarian


Contains iron


Good source of betacarotene, B vitamins and vitamin C





50g fine cornmeal


400ml water


2 large florets broccoli





Mix the cornmeal with the water and bring to the boil, stirring all the time. Simmer, stirring regularly, for 10 minutes until the corn is cooked. Meanwhile steam or microwave the broccoli until tender and drain. Blend both ingredients together into a suitable consistency.





Cod and sweetcorn chowder





Share this with your baby by pur茅eing or mashing her portion and enjoying yours with some crusty bread.





Good source of B vitamins, calcium, betacarotene and vitamin C





100g cod fillet/steak


300ml milk


1 medium floury potato, peeled and diced


2 bayleaves


100g frozen sweetcorn


1 dessertspoon of parsley





Gently poach the cod in the milk along with the potato and bayleaves for around 8-10 minutes until the fish flakes. Remove the fish, potato and bayleaves and place in a dish to keep warm. Add the corn to the milk, bring to the boil and cook for 2 minutes. Return the other ingredients to the pan, add the parsley and bring back to the boil. Mash a little for yourself (this will thicken it up), and either pur茅e or mash for your baby.





Creamy coconut lentils





Vegetarian


Contains iron


Good source of B vitamins








1 dessertspoon rapeseed or sunflower oil


Half a small onion, very finely chopped


100g lentils


200ml water


50ml reduced-fat canned coconut milk





Fry the onion in hot oil until soft. Add the lentils and pour over the water. Cover and cook gently for 15 minutes, or until the lentils are nearly soft, stirring occasionally. Add the coconut milk. Heat through for a further 5 minutes. Pur茅e or, for an older baby, mash or serve as it is.





Carrot, swede and baby rice mash





Vegetarian


Good source of betacarotene





2 carrots, peeled and diced


Quarter of a small swede, peeled and diced


1-2 tbsps baby rice





Steam carrots and swede until tender, and mash together with a little of baby's usual milk to make a runny pur茅e. Thicken up with some baby rice and serve.





Chick pea and coriander stew





Vegetarian


Contains iron


Good source of betacarotene, B vitamins and vitamin C





1 dessertspoon olive oil


Half an onion, finely chopped


410g can chick peas, drained and rinsed well


4 tbsps canned chopped tomatoes in juice


1 tsp ground coriander





Heat the oil and gently fry the onion until lightly browned, add the remaining ingredients, stir and cover. Simmer, stirring occasionally for 15 minutes until the chick peas are soft. Blend until a suitable consistency or, for an older baby, just mash the stew and serve with mashed potatoes or cooked cornmeal

Baked apple dumplings


500g/1lb shortcrust pastry


4 even-sized cooking apples, peeled and cored


50g/2oz sugar


milk to glaze


caster sugar





Method


1. Divide the pastry into four pieces and roll each piece into a round 20-25cm/8-10in across.


2. Place one apple on each pastry circle and fill the centre with sugar.


3. Moisten the edges of the pastry with water. Gather the edges to the top, pressing well, to seal them together.


4. Turn the dumplings over. Brush the tops with milk and sprinkle with caster sugar.


5. Decorate with pastry leaves if desired.


6. Bake on a greased tray towards the top of the oven at 220C/425F/Gas7, and continue to cook for a further thirty minutes until the apples are soft. Eat hot or cold.





or Cheese and onion pasties





900g/2lb shortcrust pastry


2 tbsp vegetable oil


450g/1lb onions, peeled and sliced


450g/1lb mature cheddar, cut into 1cm cubes


1 tsp paprika


salt and pepper


1 egg, beaten, for glazing





Method


1. Preheat the oven to 200C/400F/Gas 6.


2. Roll out the pastry and cut out 6 circles 20cm/8in in diameter.


3. Heat the oil and cook the onions in it until starting to soften. Take off the heat and cool.


4. Stir in the cheese cubes and paprika and season well. Divide the mixture between the six circles and crimp the edges together.


5. Brush with a little of the beaten egg. Put on a baking sheet and bake in the oven for 20-30 minutes until the pastry is golden. Serve hot or cold





or Plum and Soured Cream Flan





Shortcrust Pastry


For the filling:


1录 lb (575 g) dessert plums


10 fl oz (275 ml) soured cream


1 oz (25 g) caster sugar


3 egg yolks


陆 level teaspoon mixed spice


1 level teaspoon ground cinnamon


2 oz (50 g) demerara sugar





Pre-heat the oven, and a baking sheet, to gas mark 6, 400掳F (200掳C).





You will also need a 10 inch (25.5 cm) fluted flan tin, greased.





Roll out the shortcrust pastry and line the flan tin. For the filling, halve the plums and remove the stones. Now beat the soured cream together with the caster sugar, egg yolks and mixed spice, then pour this into the pastry case and arrange the plums over the top (flat side up). Place the flan on the baking sheet and bake for 20 minutes. Then mix the cinnamon with the demerara sugar and sprinkle it all over the top. Bake for a further 20 minutes, turning the heat right up to gas mark 8, 450掳F (230掳C) for the final 5 minutes so that the top can brown nicely. Serve warm or cold





or Quick 'n' easy apple pie


For the filling


700g/1.5lb Bramley apples, peeled, cored and sliced


80-125g/3-4oz soft brown sugar


grated rind and juice of 1 orange


1 tsp of mixed spice


1 tbsp plain white flour


25g/1oz butter





For the crust


175g/6oz prepared shortcrust pastry


5-10g/1-2tsp caster sugar





Method


1. Preheat the oven to 200C/400F/Gas6, 15 minutes before baking the pie.


2. Mix together the sugar, grated orange rind, mixed spice and flour.


3. Place a third of the apple slices in the base of a 1.2 litre deep pie dish and sprinkle with half the sugar mixture. Cover with half the remaining apples and sugar then arrange the rest of the apples on top. Pour the orange juice over.


4. Cut the butter into small pieces and dot over the apples.


5. Roll the pastry out on a lightly floured surface about 4cm larger than the pie dish. Cut out a 1.25cm strip. Dampen the edges of pie dish with a little water then place the thin strip on the pie dish edge. Dampen the pastry edge then place the pastry lid in position. Press the edges firmly together. If you like, any pastry trimming can be used to decorate the top.


6. Brush the pastry with a little water and sprinkle with caster sugar. Bake in the preheated oven for 15 minutes then reduce the temperature to 180C/350F/Gas4 and continue to cook for 30 minutes or until the pastry is golden brown. The pie can be sprinkled with a little more sugar after baking if you wish.


7. Serve warm with cream, custard or ice cream.





Variations


1. Replace the grated orange rind with 2tsp of ground cinnamon, add to the soft brown sugar and flour.


2. Add about 2-3 whole cloves to each layer of apples in the pie dish.


3. Add 80g/3oz cut mixed peel to the apple layer





or Raspberry and almond slice


500g/1lb 1陆oz shortcrust pastry


50g/1戮oz butter


50g/1戮oz caster sugar


1 small egg


125g/4陆oz ground almonds


录 tsp vanilla extract


200g/7录oz raspberries


1 small orange, zest only


25g/1oz whole blanched almonds, crushed





Method


1. Preheat the oven to 200C/400F/Gas 6.


2. Roll out the pastry to a 12in/30cm x 8in/20cm rectangle and transfer to a greased baking sheet. Prick with a fork and bake for five minutes.


3. Beat the butter and caster sugar until pale and fluffy. Stir in the egg, ground almonds and vanilla extract to make a stiff paste.


4. Spread the almond paste on top of the pastry leaving a border of pastry on the outside.


5. Combine the raspberries and orange zest. Scatter over the paste and push down slightly.


6. Scatter over the crushed almonds.


7. Bake for 20-25 minutes until puffed and golden.


8. Remove from the oven and gently transfer to a wire rack to cool. Slice and serveFood recipes to make with shortcrust pastry?

brown onions and leeks add chicken pieces, add a small amount of flour, and mix. add a little butter, then milk (little at a time) until mixture becomes thick and creamy. Add a stock cube (I use knorr chicken stock cubes or vegetable) Mix well. Put in your choice of herbs (tarragon is good or basil) season.





Place into your shortcrust pastry case and top with pastry. cook in the oven for about 40 mins.





You can vary this recipie by adding other vegetables or meat.
Well you can do sausage rolls, pie (chicken, beef, vegetable, but not a pork pie, you need hot water pastry for that!), you could do strawberry or lemon tarts, tarte tatine, and so much more!
Something that is really good either hot or cold (especially cold though with a salad), is a sausagemeat and apple pie...





You basically lline a pie dish with pastry and then pop some sausagemeat into the bottom of it. Then, lay a few layers of apple on the top of this (cooking apples can be a little tarte so maybe a sprinkle of sugar on the top, or, if you don't want to use apples, use apple sauce) then pop the pastry lid on the top and pop it in the over until golden brown.





Leave to cool and serve with salad... delicious!

Lemon Sponge Pie





1tbsp. butter


1 cup sugar


2 tbsp. flour


Pinch of salt


2 eggs, separated


Juice of 1 lemon


Grated rind of 1 lemon


1 unbaked 9'; pie crust





1. Blend together butter and sugar until completely mixed. Add flour, salt and grated lemon rind and mix thoroughly.





2. Beat egg yolks until lemon colored and blend with first mixture. Stir in lemon juice and mix well. Add milk and blend thoroughly.





3. Using clean beaters, beat egg whites until stiff but not dry. Fold in lemon yolk mixture until the froth is fairly evenly distributed through it all.





4. Pour into a 9'; pie lined with uncooked pie crust. Bake in a preheated 425 F. oven for 10 minutes. Reduce heat to 350 F. and bake 35 minutes more. Let cool before serving. May be served either completely cool or still slightly warm...





Preparation time: 30 minutes


Baking time : 45 minutes


Serve 8-10
CHICKEN POT PIE





Short crust pastry (frozen or recipe on Crisco tin)





Line pie dish. 2 tins chicken soup, Campbells 1 tin celery coup, Campbells 1/2 c. sm. frozen onions 1/2 c. frozen peas 1/2 c. cream or milk


Mix all together. Place in pie dishes. Cover with pastry. Bake 1 hour at 350 degrees. Makes 2 pies.

    1 Cup (2 sticks) margarine, room temp


    陆 Cup powdered sugar


    3 Cups All Purpose flour


    1 tsp vanilla


    pinch salt





    Whisk dry ingredients well. Beat marg. and vanilla until fluffy. Add dry ingredients to marg. Mix just until combined. Press or roll out to about 3/8'; thick, and cut into small squares or use simple cookie cutter. Prick a few holes in each, or use the tines of a fork. Place on parchment paper. Dust tops w/ a bit of granulated sugar to make them sparkle. Bake at 325潞F for approx. 15 mins or til golden brown. about 3 dz. Cool on racks; store room temp in airtight container.

    Can anyone tell me some Missourian food recipes?

    I am doing a project and i need to know a missourian recipe from the 1830's and 1870's, it doesn't need to be from that time era.

    Something in the 1830s, I'd imagine something like chicken stew would have been popular, ie: go kill the chicken, and set over the fire with vegetables (grown on the land, such as onions, carrots, potatoes, maybe celery..)and then eat it when it was dinner time.





    popular %26amp; why they used it would be it was all they had.





    maybe had cows %26amp; pigs too for ham %26amp; bacon %26amp; the like.


    They probably milked the cows for something to drink.

    Pollo Alla Spiedini Prosciutto


    8 oz chicken tenders


    1/4 cup sliced mushrooms


    1/3 cup Zia鈥檚 Sweet Italian Dressing


    1/4 cup diced prosciutto ham


    1/4 cup Italian seasoned bread crumbs


    1/4 cup shredded provel cheese


    3/4 cup Zia鈥檚 White Wine, Lemon, %26amp; Butter Sauce








    Combine chicken and salad dressing in a resealable plastic bag and marinate for 1 陆 hours. Discard marinade. Prepare medium fire in grill. Thread chicken onto skewers and dust with bread crumbs. Grill over medium heat until juices run clear when pierced. Bring Zia鈥檚 White Wine, Lemon %26amp; Butter Sauce to a simmer over low heat. Add mushrooms and prosciutto. Cook until mushrooms are tender (about 5 minutes). Remove chicken from skewers to serving plate, top with provel cheese and cover with sauce. Garnish with additional provel cheese.





    (Note: If not using a grill, preheat oven to 350 degrees. Do not use skewers, instead arrange breaded chicken in oven safe dish and bake for 15 to 20 minutes or until chicken is cooked through).Can anyone tell me some Missourian food recipes?

    They used to eat a lot of possum just because it was handy. Also it's hard to tell the difference between possum and cornbread and mule ears and cornbread. Either way they are both finger licking good.

    1 cup white sugar


    3 eggs


    1 (14 ounce) can sweetened condensed milk


    1 (12 fluid ounce) can evaporated milk


    1 tablespoon vanilla extract





    Preheat oven to 350 degrees F (175 degrees C).


    In a medium saucepan over medium-low heat, melt sugar until liquefied and golden in color. Carefully pour hot syrup into a 9 inch round glass baking dish, turning the dish to evenly coat the bottom and sides. Set aside.


    In a large bowl, beat eggs. Beat in condensed milk, evaporated milk and vanilla until smooth. Pour egg mixture into baking dish. Cover with aluminum foil.


    Bake in preheated oven 60 minutes. Let cool completely.


    To serve, carefully invert on serving plate with edges when completely cool.Anyone have some easy authentic Mexican food recipes?

    Prepare this very spicy mix for him. One can jalapeno peppers (with its water), 3 cloves of garlic, one chipotle pepper, olive oil to thin the sauce, pepper and a pinch of salt. It goes with anything mexican and even other things you like to spice up.





    If you like guacamole with chips then: Peel and mash one avocado with a fork. Add chopped tomato, onion, fresh parsley, garlic and a bit of olive oil. Top with grated quesadilla cheese.
